Puff Pie with Chicken in Count Style

Ingredients
Puff pastry 1 kg
Filling:
Boiled chicken or turkey meat 500-600 g
Egg 2 pcs.
Sauce
(1 tbsp. L. Butter,
1 tbsp. l. wheat flour,
2 tbsp. chicken broth) 2 tbsp.
Cream 10-20% 1 tbsp.
Fresh champignons
(boil, chop)
or 50 g dried mushrooms
(pre-soak and boil,
chop) 10 pcs.
Cognac or rum 2 glasses
Salt, nutmeg
Lubricating egg
Cooking method

I take the ready-made frozen dough. It defrosts for about 20 minutes, during this time you can prepare the filling. To prepare the sauce, heat the oil in a pan.
Add flour to the dissolved butter, stirring continuously, bring until smooth.
Pour the broth in a thin stream with constant stirring, bring sour cream until thick.
Season to taste.
Add 2 yolks and cream, mix well.
Add finely chopped poultry, boiled and finely chopped mushrooms.
With continuous stirring, bring the mixture over low heat until thickened, then cool.
Add cognac or rum to the chilled filling, season with salt and nutmeg.
Roll out the puff pastry 0.7-0.8 cm thick, prick with a fork, lay out the filling, cover with a layer of dough, pinch the edges, prick with a fork, brush with an egg.
If, when lifting the corner with a spatula, the pie does not bend, then the dough is baked, you can take it out.

Cooking program: Bake at 220-240 degrees until browning.

I just didn't understand about the thickness of the dough. Is it less than 0.8 cm BEFORE rolling. Or roll out two layers at once?

Recommendations are given for homemade puff pastry. Purchased, of course, roll out like on a regular pie, each sheet separately, and not too much during this procedure, since the filling is rather wet, and the dough will not grow.
