Ingredients

Honey 500
Egg 2
Sugar 500
Margarine or butter 300
Cocoa 30
Water 50
Sour cream 200
Vodka 20
Cinnamon 10
Cardamom, cloves, ginger, nutmeg, vanilla, orange peel 3 g each

Cooking method

  • 1. Melt honey, sugar, margarine, water until sugar dissolves. The mass should not boil, but only warm up, the temperature should not exceed 85 grams. Remove from stove.
  • 2. 700 g of flour mixed with spices, baking powder, zest, cocoa.
  • 3. Pour the flour mixture into the honey-sugar mass and knead well. It turns out choux pastry, the consistency of thick sour cream. You need to knead very well so that there are no lumps.
  • 4. Leave the choux pastry to cool to room temperature. It is important!
  • 5. Mix eggs with sour cream and vodka, add to the cooled choux pastry.
  • 6. Add the remaining flour in 100 g portions and knead well. About 20-30 min. The dough is dense, shiny, does not stick to your hands.
  • 7. Wrap in plastic. Leave in the refrigerator for 1 hour. The dough turns out to be about 3800 gr.
  • 8. Bake thin sheets for a gingerbread house at a temperature of 180 g for 5 min.
  • Cookies in silicone molds 15 min.

From such a quantity of dough, we made 2 houses, 16 cookies in molds and 180 small cookies for painting.

Ilona, ​​yes, the dough is not loose. I tried 2 options. The first one laid out the dough in silicone molds and the second one rolled out a sheet of about 5 mm, cut out a house according to templates and crankcases cookies.
