irina2101, if the photo confuses you, then this is meat after pickling, that is, it is juice released from meat, salt and alcohol dissolved in it. In fact, there is not so much liquid and the amount depends on the meat used. And at the very beginning of the process you will get a "salt gruel", which is used to rub the meat evenly as possible.
