But there are a couple of points that will help you to simplify and facilitate the cooking process a little:
1) Believe me, rolling a large sheet 16 pieces is more juicy - it is much more difficult than rolling 16 pieces of small ones, starting with the fact that it takes much more time and effort, and ending with the fact that it is difficult to maintain uniform thickness throughout the entire area. I have 50 years of experience in rolling.
If there is a dough rolling machine, then it is easier on it. Although, I confess, I have this machine, and with a motor, I honestly admit, I just did not try to roll the dough for manti on it, for me to roll out 40-50 more juicy dough by hand - it will take 10 minutes, during which the second person in parallel easily blinds themselves manti.

2) By cooking time: for some reason, these 45 minutes are spelled out in all recipes! But! 25-30 minutes is enough for the manti to be ready !!! It all depends on the onion, it takes the longest to cook. There is a little secret, before putting it in the minced meat, remember it with your hands, then the onion will cook faster. all the more, you can always open the lid and try the readiness of the onion with a fork, "picking out" it from the top manti and, if necessary, prepare the dish to your preferences.
Why 25-30 minutes? Firstly, the dough does not "creep out during this time (not even very good), the manti retain their shape better and will be more juicy, secondly, you can make the juices thinner, and thirdly, when removing the dough, the juice will burst less and run out less, fourthly, the flour is often of poor quality and creeps away from cooking, regardless of the number of eggs in the dough.
I repeat, I've been cooking manti for 50 years, by 25 minutes I came about 15 years ago and everyone who cooked manti for 45 minutes, having tasted my manti prepared in much less time, switched to this method. It's just that these 45 minutes for some reason have been hammered into the heads of generations from time immemorial!
