Wheat-rye bread 50:50 with prunes (bread maker)

Ingredients

Pressed yeast 10 g
Wheat flour 200 g
Rye flour 200 g
Sugar 1 tbsp. l.
Salt 1.25 tsp
Panifarin 1. tsp.
Extra R 1 tbsp. l.
Chicory powder 1 tbsp. l.
Apple, grated 110 g
Water 200 g
Bread kvass concentrate 1 tbsp. l.
Vegetable corn oil 2 tbsp. l.
Lemon juice 1 tsp
Caraway 1.5 tsp.
Prunes 50 g

Cooking method

  • I put all the products in the HP bucket as recommended in the instructions: at the bottom of the yeast, ground with a small amount of flour, then flour, salt and sugar in different corners of the bucket. Added panifarin, dry ferment Extra R, chicory powder. I mixed the grated apple with water, added bread kvass concentrate, lemon juice and mixed everything. I poured it into a bucket, put in vegetable oil, poured cumin. Finely chopped prunes, rolled in flour and poured into the HP dispenser.
  • I switched on the rye bread program, put the usual spatula. Somehow I forgot to change, since then I superstitiously left this one, without changing it for a spatula for rye bread.
  • The top of the bread was torn slightly but baked well. The crust is delicious, the crust is crispy.
  • Sugar can be replaced with honey, but with a mild taste, otherwise it will clog the taste of bread, for example, with sunflower. We didn't like buckwheat honey in bread.
  • Grated apple can be replaced with applesauce from baby food, 120 g jar of puree.
