Hurrah! Hurrah! And I will definitely try! Only when I bake bread with buckwheat flour, for some reason I always get it with a bumpy roof, but the taste is just superb. I have Panas 2502. I will measure everything strictly according to your recipe
Helen_Ka_
According to this recipe, my bread always turns out lush and very tasty
Vasilisa VV
How well your bread has risen! I have buckwheat only up to 6-7 cm for some reason
Helen_Ka_
My buckwheat bread always rises well ... I take 1 grade wheat flour, Pakmaya dry yeast (they never let me down) Try it !!!

Are there teaspoons in the sugar recipe?

What confused you about sugar? Normal amount! Can be reduced or increased slightly without loss of flavor
finika
Yes, I just clarified. Usually put 1 or 2 TABLE spoons of sugar. Now I bake this bread
Vasilisa VV
When I baked this recipe for the first time, I put it as it is written in tsp, and I got a wonderful balanced taste. And today I was baking the second loaf for my parents, sugar was thrown on the table. l, out of habit, I'm afraid it will be very sweet ... I noticed an error just after reading these messages

That's right, according to this recipe, I use teaspoons of sugar and salt (the ones that come with the bread maker). It's balanced for my taste! But, of course, you can change the amount, according to your taste preferences.
finika
Thanks for the recipe! The bread turned out to be delicious. I put everything according to the recipe and added seeds. Super!
Helen_Ka_
I am very glad that you succeeded! To your health !!!

Why not? The author of the recipe suggests: wheat flour and buckwheat flour. Track the consistency of the dough and the balance of flour / liquid, kneading - everything will definitely work out
Helen_Ka_
Of course, you can also use premium flour. Try
Leonora
Please tell me how long does it take to stand? I was so upset, she is silent, 30 minutes have passed since the start of the program and silence. Or should it be?
Admin
This is the specificity of Panasonic, there is a "temperature equalization" function, later the batch will start

In my opinion, a very interesting recipe! I will definitely try, thanks! Just one question Since I have a different bread maker, tell me what program 01 you have so that I can identify it on mine. I'm not a magician, I'm just learning
Admin

Such bread can be baked on the basic (basic) program
Leonora
Please tell me how to count the ingredients for a larger weight of wheat-buckwheat bread baking? When I baked it for the first time and tried it, I really liked it. Thanks for the recipe !!!!! If it's not difficult, write the ratio of the number of ingredients.

What size bread is needed, what is the problem and where does it fail?

I did it strictly according to the recipe, since the novice baker ... I did not work out from the very beginning, in my opinion there was not enough liquid - the kolobok did not work out at all (as you described in your posts for beginners)

Well, these are general words ... let's give your recipe here, what and how much they took, how they measured, and so on ... and let's see what was wrong And as a rule, you need to give a photo of bread and crumb, then you can clearly discuss

I don't quite understand what needs to be described more specifically? Rewrite the recipe? It was like this: I took 2 tbsp. l. vegetable oil, 280 ml of water, salt 1 h. l., 2h. l. sugar, 100g. buckwheat flour, 300g. wheat flour and 1 h. l. dry yeast (I am writing from memory, just as I put it in the Mulinex bread machine). Flour naturally sifted. I measured everything carefully with a measuring cup and spoons, checking the recipe every second. Included program 1 - plain bread (or basic). And already, in principle, at the beginning, she began to understand that there was not enough liquid, but she risked adding it too late. So I'll try again and be bolder, I hope everything works out. Photo, alas, no. And there was nothing to photograph, for it turned out to be a shapeless cobblestone.
This is not my first bread, I baked both Borodinsky and beer, and wheat-rye, but this is the first time!
Admin
I checked the recipe, it was written correctly!
If everything is laid down in the dough, then the dough should be of high quality, the bun is normal. Well, if plus / minus 1 tbsp. l. liquid or flour!
This recipe shouldn't make a cobblestone!
This means there are discrepancies in the recipe record and the actual measurement of flour and liquid. Let me remind you: flour is measured in grams, liquid in milliliters and these are not equal quantities.
Or you need to check the quality of the yeast How to check and activate the yeast? https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=140919.new.html#top

Check again the recipe and the ingredients in the dough
Dreaming
I do not in any way associate my failure with the recipe, I believe that this is an isolated case of such bad luck. Everything is measured correctly, I took this extremely seriously, besides, on a measuring glass I have the words: flour - gr, water - ml, you must agree, it's difficult to confuse ... The program was put on an average volume of bread, for my HB it is 1000g, crust dark.
There is one guess - flour ... So I will check it in the near future, I'm sure everything will work out, and thank you very much for your responsiveness and willingness to help newcomers.

PS I will definitely check the yeast, this cannot be ruled out, although they have not let me down yet.

In general, you were right, the yeast was barely alive. Thank you!

Good evening everyone. I counted the number of ingredients for a large loaf. By weight XL-yeast 1.5 tsp;
Wheat flour-450g.
Buckwheat flour-150g.
Salt-1.5 h. l. Sugar-3h. l.
Plant oil-3st. l.
Water-420ml.
It seemed to me that there was not enough water, the bucket already creaked. In general, I added another 5st. l. water I will wait for the end of baking. Yes, buckwheat bread according to the first recipe for weight M, it turned out to be a small, flat brick, but soft, dense and tasty. At work, they ate it all at once. So I decided to bake more. If you calculated incorrectly, then correct it. Thank you.
Admin

For 600 grams of flour, 400 ml. fluid is normal. BUT if more water was added, it means that the dough was necessary, perhaps the flour turned out to be drier.
But yeast is a bit too much, only 1.7-2 tsp is enough.
Let's see what happens
saika
Tanya. so I yeast only 1.5 hours. l put on weight XL. Why a lot? If you write -1.7-2h. l.

It is difficult to read a recipe when it is written in one line, and without punctuation marks, together So, I read it like that, sorry
The main thing is that the bread is beautiful.
saika
Tanya, I kind of printed it like this:
weight XL-yeast 1.5 tsp;
Wheat flour-450g.
Buckwheat flour-150g.
Salt-1.5 h. l. Sugar-3h. l.
Plant oil-3st. l.
Water-420ml.

Yes, I also found a recipe for Buckwheat bread with kefir.

Ingredients:
Kefir - 100 ml;
Milk (preferably baked) - 300 ml;
Water - 60 ml;
Sunflower oil - 2 tbsp. l;
Salt - 1.5 tsp;
Sugar - 2 tbsp. l;
Wheat flour - 450 gr;
Buckwheat flour - 100 gr;
Yeast - 2 tsp

Mode 1 Basic, Weight 1 kg, crust - medium.
Ready-made exit 900 gr.

Note: It is necessary to monitor the condition of the kolobok due to the different density of kefir and milk.
Bon Appetit!

Today I tried everything according to the recipe, before going up to HP, and then into the mold and into the oven. It turned out very well too. Thanks again for the recipe!Panasonic SD 2501. Buckwheat bread

Yesterday I baked bread according to this recipe - it turned out super!

I heard about the capriciousness of buckwheat flour, I was very afraid that it would not work. Therefore, I added 1 tbsp to the recipe. l. unfermented malt, while reducing the amount of flour by 1 tbsp. l. And I missed a little more with the liquid, my hand trembled, and I poured it in more milliliters by 5. As a result, when mixing, I had to add a little less than 2 tablespoons of flour to make the bun turn out to be normal. I came to the conclusion that everything in this recipe is perfectly balanced, and if I had not conjured over it, but took everything as it is written, then everything would have worked out by itself.

I have buckwheat flour from a Belarusian manufacturer, it says that it is made from quick-cooking cereals. Wheat was only of the highest grade. Instead of water - whey (now I bake everything on it, it rises much better).

Here is a photo of a handsome man (don't judge strictly for the quality of the photo, I take pictures with my phone):

I wish I could add more poppy seeds to it ... It will probably be tasty ... However, unfortunately, it is very difficult to find them here.

Bread maker Panasonic 2501 bought today. Today we baked bread according to this recipe. The bread turned out awesome !!!!
Thank you very much for the recipe. My wife and I will learn other recipes.

Good day. I apologize, I did everything exactly according to the recipe, unfortunately it did not work out, HP 2502. White tender flour and buckwheat garnets.

It didn't work either, two times. Moreover, if the first time I thought it was my own fault - I added whole grain flour, but this time I did everything exactly according to the recipe. Freshly opened yeast, "Garnets" buckwheat flour, wheat flour - the one from which I bake regularly. It looks like it doesn't have enough water, right? Although the inside is baked and delicious.

I have a suspicion that such bread does not need an ordinary kneader, but the one for rye flour, with slots.Already changed the truth at the end of the batch, but it seemed that it turned out more decently. Well, I added 40-50 ml of water over and above the recipe. I will try further.
Admin

The usual "kneader" is needed!
And you need to correctly knead and understand the essence of the dough, make the correct flour-liquid balance, understand how much buckwheat and wheat flour is needed so that a lump of unmixed dough does not work out.

Irina St.
decided today to still try to bake this bread ... I did everything according to the recipe, but the trouble is that the bun didn't even work out, large dense crumbs randomly dangled around the bucket (Panasonic 2512) ... I had to add warm water, and then, in the process kneading, drip more sunflower oil for the elasticity of the dough) ... what happens -: girl-th: now I have no idea, I'm sitting, waiting for the result ... always and of all kinds from the recipe book that came with hp the bread turned out perfectly, this time, some kind of inconsistency in the ingredients .. wheat flour is still the same - "Makfa", I started baking from it, and I continue, buckwheat flour - "Kudesnitsa", I didn't find another in our "village", yeast is still the same - "Saf moment" are red, hands are the same, stove is the same ... someone will tell you if it makes sense to try on the recipe for rye-wheat bread (I call it "Rye Bread") replace rye flour with buckwheat, leaving all other ingredients?
Helen_Ka_
Irina St., I don't even know what to tell you .. I always get very good bread according to this recipe I take 1 grade wheat flour, I use different yeast, including the saf moment, pressed (I dilute with water and add with it, and not at the beginning ). Buckwheat flour - "Magician" ... Judging by the description, you should have succeeded ... One piece of advice ... Try again!
