I tried to make condensed milk three times:
1.from ultra-pasteurized milk with a fat content of 1.5% and coconut sugar,
2.from pasteurized milk 2.5% and cane sugar
3. from concentrated milk and cane sugar.
The first option curled up into lumps at the end of cooking, and there were severely burnt traces on the edge of the liquid on the pot, I threw everything out.
The second option - there are also lumps, despite the added soda, not very thick, it tastes like toffee and very sweet, I did not like it.
The third option is lumps, the structure is heterogeneous, the color is dark, it tastes better than everyone else, but the structure is terrible.
All three attempts constantly formed a film on the surface, which had to be removed with a spoon, if not removed, then a wooden shell could be obtained, the film is not completely removed and these residues form lumps in the finished product.
What am I doing wrong? Help me please. The photo shows a gorgeous homogeneous thick milk.

Condensed milk is moderately fluid, homogeneous and beautiful creamy beige color. From three liters, the output turned out to be a liter and two or three hundred approximately.
But now the question is, if you cook two liters of milk, then the 6.5 morphine will be too big? Maybe it's better in one and a half liter slow in two stages?
