Ingredients

Dough:
Ryazhenka 225 g
Serum 75 g
Dark molasses 35 g
Dry yeast 4 g
Wheat flour 100 g
Dough:

Wheat flour 380 g
Butter 50 g
Vegetable oil 15 g
Sugar 50 g
Salt pinch
Cardamom 5 boxes
Thick jam for the filling
Milk for lubrication
Sugar for sprinkling

Cooking method

  • For the dough, beat all the ingredients and leave for 30 minutes.
  • Peel the cardomon, remove the seeds, grind in a mortar.
  • For the dough, add all the ingredients to the dough. Mix for 2 minutes at low speed, then knead until smooth at high speed for 7 minutes. I kneaded in Thermomix, Spikelet mode.
  • Knead the dough, roll up, place in a greased container, cover and leave for 30 minutes.
  • Then knead the dough, fold the "envelope", return to the container and leave for 60 minutes.
  • Then knead the dough. Divide into 65 g pieces, form a ball from each, cover and leave for 10 minutes.
  • Next, flatten each ball with your hand into a cake, lay out the filling, pinch the edges, form a bun, put on a baking sheet with the seam down. Cover and leave for 30-40 minutes.
  • Brush with milk, sprinkle with sugar before baking.
  • Bake in an oven preheated to 200C until tender. The exact time depends on your oven, it took me 40 minutes.
