Eggplant with Garlic Sauce (Philips Air Fryer)

Ingredients

Fat sour cream

Cooking method

  • I love eggplant very much. So I decided to share a simple recipe.
  • Wash the eggplants, cut the stalk. Slice the eggplant across and then cut both halves into wedges like a watermelon. My eggplants were slender and I cut them into 6 slices. Fold the slices into a bag and add salt. Leave on for 10-15 minutes. The eggplants will release juice and the bitterness will go away with it. Place the wedges on a paper towel and pat dry. Pour juice from the bag and blot the bag with a paper towel. Put the eggplant back in the bag and add a little vegetable oil. Shake to distribute the oil. Fry in a preheated air fryer for 18 minutes at a temperature of 200 degrees. Shake a couple of times while frying. I filled the basket 3/4 full, in the process the eggplants were fried.
  • Prepare the garlic sauce: mix sour cream with chopped garlic and salt to taste. Bon Appetit!

Note

It seems to me that I spent more time on writing than on cooking the eggplants turned out to be fried, delicious and did not taste bitter!

there is no bitterness in eggplants now, since hybrids are mainly grown. In this case, it's not about bitterness, but about removing excess moisture from the eggplant. During further processing, they then absorb less oil and splash less.

And we very often have bitterness. Therefore, I almost always stand in salt. I don’t do this only when I’m preparing ratatouille.
