Ingredients

Fresh cucumbers 2 kg. of various sizes (all after processing)
Bulb onions 400 grams (net weight)
White sugar 2 tbsp. l. with a slide
Gray rock salt 1.5 tbsp. l. with a slide
White wine vinegar (or 9%) 100 ml.
Fresh chopped dill small bunch (1/2 cup)

Cooking method

  • Now it is difficult to say which recipe I took as a basis - Nezhinsky cucumbers, or just a snack salad. I selected the number of ingredients to suit my taste.
  • Initially, there was a choice to make cucumbers hot in a saucepan and then put them in jars and roll up lids.
  • But, then she changed her mind, and did as I suggest here: put it in banks and sterilize it for a couple.
  • The salad recipe is very successful. And ease of preparation. And the fact that for this salad you can use cucumbers of different sizes, crooked-oblique, ripe, unripe, overripe, gherkins and with many seeds ... and so on ...
  • Rinse the cucumbers quickly in warm water to wash off the dirt.
  • Cut off the butt ends.
  • Fold in a basin, pour cold water and soak the cucumbers for 3-4 hours, then after heat treatment they will retain their appearance and crunch.
  • It is advisable to change the water once to a colder one.
  • Peel the onions. It is advisable to select onions the size of cucumbers, so it will look better ready-made.
  • Finely chop the dill.
  • In this recipe, the amount of cucumbers, onions, dill is well chosen - just in moderation.
  • Cut the cucumbers and onions into thin slices, on a burner grater. You do not need to cut cucumbers and onions into large round slices.
  • Fold the onion and cucumber slices into a large saucepan or bowl, add the chopped dill, salt, sugar and stir. It is advisable to do it with your hands in order to mix thoroughly and not to damage or break the cucumbers, but to "stir up" them and the onion, separate them and make the mass airy.
  • Let the mass be salted for 30-40 minutes so that the mass gives juice - it will be enough.

  • During this time, prepare dishes, jars, a pan for preservation steam processing.
  • I will sterilize canned food by steaming, as described here: My "cannery" - making life easier when canning at home
  • After the salting time of the mixture has elapsed, add vinegar, mix gently again.
  • Be sure to taste, you can still correct the taste, add salt-sugar to your liking. And try the cucumber juice, it is he who concentrates the salt-sugar-vinegar, which will then pickle cucumbers in jars. And the cucumbers themselves at this stage are not very tasty, they have not yet been marinated as it should be.
  • After mixing the mass, it is enough to let the cucumbers stand for about 5 minutes and you can fill the jars.

  • We fill the jars with the cucumber mixture, tightly, but do not trample with force, just put it tightly enough in the jars. Add vegetable juice from the pan on top, vegetables should be covered with marinade juice.
  • We put the cans in a saucepan, cover them loosely with lids.

  • Cover the pan with a bowl (or lid), bring water to a boil, and keep the jars under the lid for 10 minutes with 0.5 liter jars.
  • Then remove the cans from the pan, roll up the lids tightly, and put to cool on the lids. I don't put cans under the covers. Let it cool just on the table so that the cucumbers do not overheat, and they remain crispy.

The yield is good: from 5.5 kg. cucumbers, I got 12 cans of ready-made salad, 0.5 liters each.
