The proportions are as follows:
0.5 cups cornstarch, 2.5 cups wheat flour (glass - 250 g), 1 tbsp. l. vegetable oil, 1 tsp. mix.
Take 190 ml of water (I also went there juice, which remained from defrosting the shrimps, topped up with water). Pour 50 ml, bring the rest to a boil and pour into flour in a thin stream, stirring with a spoon. Then add the rest of the water. Knead the dough. It is dense, knead with your hands until you get bored (well, 5 minutes for sure). Even if it is somehow unsightly, not smooth, do not get upset. Put in a bag, put it in the refrigerator and forget for half an hour.
Made it about a month ago for steamed dumplings. Half remained, rolled out on a noodle cutter. I transferred the layers with a film, and they perfectly "overwintered" there all this time. She took it out, thawed it, immediately put it on the mold, did not even add flour. On the one hand, the dough is not sticky, but on the other hand, it stuck together perfectly. Because if you put 2 layers at once, then the middle seam turns out to be covered with dough both from above and below. And while I do not understand how to be here ... This rib, which is in the middle, must necessarily be involved ... I made a small portion, and in principle, labor productivity was not very important to me, but if you do a lot ... In short, I haven't come up with anything worthwhile yet, except how to take 2 layers, fold them on the board, slightly overlapping, and manually roll the resulting seam. But I don’t know if it will be faster than half a serving.
