For a long time I was going to share with the members of the forum my method of making dumplings. Thanks to the forum I learned a lot, learned a lot for the first time. It's time to pay off your debts. I love dumplings so much that I always have them in the freezer. But I'm also a big lazy person. And I was always interested in the question of how to make dumplings very quickly and cleanly and without waste. I came up with this way. Since it is easier for understanding to show the process in a photo than just to tell, I will expose the whole process of making dumplings in step-by-step photos with my comments. Perhaps it will be more like a master class. Let the moderators decide whether to leave it in this thread or to highlight it in a master class. There will be many photos.
So, let's begin. I adapted this method for the use of all devices available to us, and most importantly, it is suitable for the use of layers of dough from under the noodle cutter for the "cellular" dumplings.
I use noodle cutter Empire Titania for rolling dough, blender Brown power 600 watt from large bowl and with knives for kneading test by method Admin "Homemade fast noodles" (you can knead the dough with a bread maker, a food processor or by hand), plastic dumplings rectangular shape domestic firm "Idea" (rectangular shape is very convenient for layers of dough from under the noodle cutter, reusable confectionery bag with an adapter and a nozzle for depositing minced meat into the holes of the dumplings, scissors stationery, preferably with long working blades (you cannot do without scissors, they have important work), strainer for sprinkles flour dumplings and layers of dough, any rolling pin and invented by me stencil under dumplings... I'll talk about it in more detail later.
Since the layers of dough from under the noodle cutter are narrow (only 14 cm), they are not enough to completely close the dumplings. Therefore, a rectangular dumpling maker was chosen, it is domestic, the company "IDEA"

Here the dumplings are covered with a stencil I have invented and made. Thanks to the stencil, when dusting, flour falls strictly on the required cells-honeycombs of the dumplings. And the dough waste along the edges are protected from flour and are used further for sculpting dumplings.

Here is the reverse side of the stencil superimposed on the dumplings. The stencil was cut with a clerical mock knife from an ordinary heat-resistant napkin for 18 rubles.

They are very convenient for accurately cutting the rolled dough without risking scratching the dumplings with a knife or cutting through the silicone dough mat. With scissors I also cut off the piece of dough I need from a large kolobok. Scissors are indispensable for me when placing minced meat in the holes of a dumpling maker or molding meatballs using a reusable pastry bag. (Minced meat is viscous and an ordinary disposable bag does not always withstand). When I have deposited the portion of minced meat I need on the hole of the dumpling maker from the bag, I just chick with scissors next to the tip of the nozzle, without getting my hands dirty. Minced meat from the bag and with the help of scissors is deposited very quickly.
