Pork knuckle with potatoes

Ingredients

pork knuckle 1-1.2 kg
potatoes 0.5KG
onion (large) 1 PC
carrots (medium) 1 PC
garlic 1-2 cloves
For the marinade:
dark honey (liquid) 1 tbsp
mixture of four peppers 2 h l
coriander 1 tsp
bourbon 100 ml
soy sauce 3 tbsp
olive oil 2 tbsp
bavarian mustard 2 h l

Cooking method

  • 1. Mix all the ingredients for the marinade (pepper and coriander, not finely grind in a mortar). Pour the shank with the resulting marinade and leave to marinate for 12-14 hours. Turn over several times while marinating.
  • 2. Cut onion into half rings, carrot into slices and place on the bottom of the bowl. Lay the shank on top, pour in the entire marinade and add 70-100 ml of water. Switch on the "MANUAL" mode, Т120С, pressure 50kPA, time 45 minutes. The pressure of 20 kPa reached two minutes after the start of the mode, 30 after five and programmed 50 on the eighth. So the meat was cooked under high pressure for only 37 minutes and during this time it was already quite soft.
  • 3. At the end of the mode, release the steam, open the lid and place the potatoes and garlic in the bowl.

  • Switch on the "Manual" mode, Т100С, time 30 minutes.
  • 4. After the end of these two modes, I have a fairly large amount of liquid in the bowl.

  • To thicken the sauce turned on the "FRY" mode (with the lid open), the default time (15 minutes). The sauce reached the desired consistency in seven minutes and I reset the program.

Note

I cooked the knuckle in the oven in different versions - with different marinades, in foil, and in a rooster. On average, the cooking process took 2.5-3 hours and it did not always turn out as juicy and soft as we would like. In the multicooker, the total cooking time was almost halved, and the shank turned out to be very tender.

Cooked yesterday with my husband. True, without bourbon and combat sauce, but the roulette turned out to be just wonderful. the meat is soft, easily leaves the bone, the potatoes are cooked perfectly, the onions and carrots turned out to be sweet as candy, I liked it, but my husband did not. In general, as we sat down at the table so almost everything at once and ate, phew!
