Oh, how sunny! And sour! I love citrus pastries very much! I will definitely bake it, thanks for sharing the recipe!
P.S. Natasha! I began to rewrite the recipe and the question arose: at the beginning of the recipe you write that sugar in a biscuit is 100g, and in the description "Beat 3 yolks in 20g of sugar into a white mass. Beat 3 proteins with 20g". What about the remaining sugar? And only 40 g of flour? Explain, please ...
Natali06
Nadyusha, but not at all, bake with pleasure!

Please answer the question simulia, above, about sugar) I added it later - you probably didn't see it)
And about the roll. So ... we turn it hot and it cools down like that. Then we unfold and are not afraid that it will break?) I have never done rolls, but here it is a sin not to do it)

And the category is baked goods, probably, not bread)
Cartoon

Cartoon, yes, we roll up hot, and wait until it cools down. You will neatly fold it, why should it break? If you are afraid to break, add a spoonful of water to the dough (at the very end), or even less, then the roll will be more plastic. You can also wrap it in a damp towel. Bake, experiment, bake first without an orange, and add bananas to the dough

On the inner edge 24 * 34, the side is somewhere 1 cm. I recently bought it at the epicenter, just what I need!

The cream is awesome, sandwiching cakes for them is a thing))
The biscuit is generally magical)) From 40 g of flour, so fluffy, tender)
Thank you very much for the recipe !!!

The only thing, but. I can't live without it))
So evenly, the biscuit came off the paper, along with the oranges, a white layer. And for me, where the biscuit stuck to her, and where it came off normally. As a result, the general view disappoints. Although I've had this before, and I also oiled the paper, but still. Next time I'll bake without paper. Standing thing)
Natali06
Toon. you are smart! , but without paper, I think you don't need to bake it, how will you take it off later? Do you have a silicone mat? try on it. Then decide what you do best.

They ate the roll in half a day - the husband is happy))

Cartoon

Caprice, you understood everything correctly, Cartoon explained correctly, unfold when it cools down. But this is how I do it, but there is an option for cooling the biscuit without folding it.
