Stewed vegetables with rice

Onions (shredded)
Carrots (coarsely grated)

Raw rice
Eggplant

Cooking method

  • On the bottom of the frying pan I put onions (chopped) in the first layer, the second layer is carrots (on a coarse grater), then a layer of sweet pepper (straws), then I sprinkle a layer of raw rice (not very much), on top - a layer of eggplant (I like a lot) and finally - tomatoes (also quite a few). I pre-peel the eggplants, cut them into strips and salt, and after 15-30 minutes I squeeze them with my hands and lay them out in a layer (according to the recipe). And I first dip the tomatoes in boiling water for 2-3 minutes, then douse them with cold water and remove the skin, and only then cut them (either in circles or pieces) and spread them in the last layer. I pour a little sunflower oil on top and on gas for 1 hour, let it boil over high heat, and then cook on a small one until the end. Yes, I forgot to write, you can add some layers of salt, but not much, purely symbolic. Do not open the lid during cooking, and after cooking do not stir, and put it on a plate with a spatula.

And you don't need liquid at all? And in what then is rice prepared?

Quite right, you don't need water at all !!! It is cooked in a liquid that comes out of vegetables. My mom tried to add water once - ruined everything !!! You don't need much rice, in one small layer!
