Pork in sweet and sour sauce

Ingredients

pork (pulp) 700 g
for the sauce:
onion (small) 2 pcs.
garlic 2 cloves
ginger (length approx. 5 cm) 1 slice
olive oil 2 tbsp. l.
soy sauce 2 tbsp. l.
dry white wine 2 tbsp. l.
Apple vinegar 1 tbsp. l.
ketchup 3 tbsp. l.
brown sugar 2 tbsp. l.
fruit juice (orange or pineapple) 125 ml
starch 1 tbsp. l.
water 2 tbsp. l.

Cooking method

  • White or brown sugar gives a "sweet" taste in sweet and sour sauce. The brown sugar gives the sauce a more caramel color and flavor. The sour taste comes from the addition of vinegar. The amount of sugar, salt or vinegar in a recipe can be adjusted to suit your individual taste. (Fruit juice can be completely replaced with dry white wine - which I did).
  • Wash the meat well, dry it, remove the films and excess fat - cut into cubes. In a thick-walled saucepan (cauldron), heat 2 tbsp. l. vegetable oil and fry the pork over high heat, so that the juice does not have time to stand out, until a slightly ruddy color.
  • Sauce:
  • finely chop the onion, garlic and ginger. Heat the vegetable oil well in a frying pan. Fry the onion, garlic and ginger, literally 2 minutes, until the onion becomes soft and transparent. We put it aside. In a small saucepan, mix the soy sauce, wine, juice, vinegar, ketchup, sugar. Mix well.
  • Add the mixture of vegetables to the mixture of liquids, mix well. Let the sauce boil. We mix starch with water. Constantly stirring the sauce, pour in the starch in a thin stream. If desired, the sauce can be rubbed through a sieve, for beauty, then it will be homogeneous. But most of the time I leave vegetables in the sauce.
  • Pour the prepared pork with the resulting sauce and simmer over very low heat for about 1 hour, making sure that the liquid does not evaporate.
  • Serve the cooked meat hot with a neutral side dish (boiled potatoes, rice, noodles).
