Recently I was presented with a bread maker and I immediately went for groceries. First, I decided to make banana bread from whole grain flour. I could not find such flour and decided to do the same from the usual one.

Recipe:
3/4 cup water
3 cups flour - Nordic
1/2 cup chopped bananas
1 yolk
1/2 teaspoon vanillin
3 teaspoons honey
1 teaspoon salt
1 1/2 tablespoons butter - poured sunflower
1 1/2 teaspoons Dried Yeast - Preston
2 teaspoons of poppy seeds

Baked in whole grain bread mode. The bread is heavy, the dough does not rise well, the crust is very hard.

I thought that probably the problem was that the flour was ordinary, but the recipe for whole grain and decided to make sweet banana bread.

Recipe:

I decided that the problem was in yeast and bought SAF-Moment yeast, although Preston had a normal shelf life.
I read that it is better to sift flour and put salt away from yeast. I decided to make the most ordinary bread.

Recipe:
1 1/8 cups water
3 cups flour - Nordic again
1 teaspoon salt
2 tablespoons sugar
1 1/2 tablespoons oil
1 1/2 tablespoons milk powder
1 1/2 teaspoons dry yeast - SAF-Moment.

He measured everything meticulously accurately with the help of a measuring cup and a spoon that came with the bread maker. I chilled the water as instructed.

The dough rose again very badly, the crust is thick and thick, the "bubbles" in the bread are very small, the loaf is heavy and small.

I was almost desperate to get anything edible ...

I have the following suspicions:
The yeast was bad both times, although I bought it in different places.

Flour should be put in less than in the recipe, since I first measure it, then sift it.

It may be worth taking not sunflower oil, but vegetable oil or even butter.

Control the dough while kneading. After about 10 min. after the start of the kneading, a bun should form. rolling on the bucket does not stick to the walls.
If not, the dough is thin, gradually add flour. By the end of the batch, there should be no batter under the mixer.
If the dough is steep, add water gradually as well. You need to be more careful with water, because it interferes worse.
As a result, the dough should be slightly sticky, but not sticky to the fingers.

Your sweet bread recipe is no exception:

2 egg yolks
