Fruits are black-purple, juicy, small, shiny drupes with red-violet juicy pulp, sweet and sour in large clusters. Red stalks. The fruits ripen at the end of August and do not crumble after the leaves fall. They contain sugars, malic, tartaric, valeric and acetic acids, essential oils, tannins, vitamin C, carotene, P-vitamin activity and other biologically active substances.

Unlike the red elderberry, whose fruits are considered poisonous, the black elderberry does not contain any harmful substances.

Black elderberries are consumed fresh and processed. Fresh berries have an unusual peculiar taste. But this taste disappears during processing. Jam, marmalade, jelly are prepared from them, dried. The juice is used as a food coloring for coloring fruit and berry juices, wines and other purposes.

The addition of flowers to grape wine during fermentation gives it a pleasant nutmeg smell. The flowers are used in liqueur and brandy production and for flavoring champagne. Flowers and flower buds contain essential oil, valeric acid, tannins. Young, peeled shoots are eaten boiled or pickled. By mixing one part by weight of dried black elderberry flowers with three parts of standard tea, an aromatic medicinal tea is obtained.

The leaves contain laxative resins, ascorbic acid, carotene and other vitamins. The bark contains essential oil.

For medicinal purposes, young leaves, flowers, fruits, black elderberry bark are used as an astringent, diaphoretic and diuretic, as well as for rinsing the mouth and for poultices. They drink navar from flowers and make poultices for rheumatism, gout and arthritis. Young blossoming spring leaves are boiled in honey and taken as a laxative for chronic constipation. Fresh berries are used for rheumatism and neuralgia.

Jelly is prepared from dried berries and used as a laxative. Elderberries are dried mainly in the sun for 2-3 days.

Elderberry preparations are widely used for influenza in the form of inhalation, for rinsing the mouth, for diseases of the respiratory tract. Preparations from the bark are used for diseases of the kidneys and bladder. Jam and jelly from berries are a good dietary remedy for stomach and intestinal diseases.

Elderberry is good for fighting mice and rats. Previously, it was planted around barns to scare away mice and rats, and hay stacks were layered with elderberry branches. The trunks of apple trees were tied with elderberry branches so that mice would not damage them. The elderberry growing in the garden scares away many pests with a number of growing bushes and trees: moth, moth, etc. Sometimes elderberry branches are cut and placed in a vessel with water in the middle of a bush or placed inside the crown of a tree. In the conditions of the Moscow region, the above-ground part of the plant sometimes freezes, but quickly recovers.

Reproduction, planting, care. Black elderberry is propagated by seeds, layering, lignified and green cuttings. If fresh seeds are sown in autumn, then friendly shoots will sprout in the spring. Spring sowing requires 50 days of seed stratification. Seedling care consists of frequent watering, weeding, thinning the seedlings and loosening the soil. Annual seedlings of black elderberry are planted in a permanent place.

Elderberry is undemanding to soil fertility, but is relatively thermophilic and at the same time shade-tolerant. When choosing a place on a site, these features must be taken into account. It is necessary to take into account the phytoncidal properties of elderberry, which are used in the fight against garden pests. Black elderberry is a useful fruit, medicinal and ornamental plant, tolerates pruning in any summer time, grows quickly, gives a lot of greenery. It must be pruned annually to prevent it from growing tall and there was no shading from it.

In the Middle Ages, elderberry was considered a sacred tree. In the books of the 17th century on natural science, she was credited with extraordinary healing power, it was believed (and this was confirmed by the experience of centuries) that the daily use of elderberries prolongs life, gives youth. Elderberry flower balm is of great medicinal value, as it is a natural plant hormone. This balm was so precious that it was sent with ambassadors as one of the most expensive gifts. Ukraine supplied flowers to the royal court for medicinal products and for the preparation of ointments and creams for the empress and her maids of honor. Vedunas treated tumors of the reproductive system with infusion of elder flowers: prostate adenoma, fibroids, fibroadenomas. It is believed that after a week of taking elderberry preparations, black and dark gray tones disappear from the aura of a sick person.

Elderberry flowers are a special medicine. Flowers are collected on wild bushes from May to July, the flower stem should not exceed 1 cm. The inflorescence is dried by spreading it in a thin layer on shelves in the shade so that they do not lose the falling flowers. Dried flowers should be yellowish but not dark in color.

Flowers contain glycosides, flavonol glycoside, rutin, tannins, sugars, organic acids, vitamin C (up to 350 mg%) and bactericidal elements. Flowers are used for herbal compresses, diaphoretic and diuretic teas, as a medicine for migraines, for gout, sciatica. They have a mild laxative effect.

The use of elder flowers in cosmetics is important. Tincture of flowers (a handful of flowers are infused in 0.5 liters of boiling water) is used to wipe the skin before washing your face. They can also be used as a face mask for baths that have an invigorating and disinfecting effect.

Berry jelly with elderberry syrup and Italian sparkling wine - ten servings
Jamie Oliver's recipe
Not only is it beautiful, but also a delicious dessert. It cools the palate so nicely. Prepare it in advance if you want - it will keep in the refrigerator for 4 to 5 days. You can make a large dish using a tureen, or you can make small individual portions. Use any fruit other than pineapple and kiwi - they will not solidify the jelly.
• 8 baskets of different berries (blackberries, raspberries, strawberries, blueberries)
• 4 plates of gelatin
• 140 ml elderflower syrup
• 2 tablespoons of fine granulated sugar
• 425 ml sparkling Italian wine, chilled
First of all, decide on the size of the jelly - will you go along the path of portioning or show the world one giant dish. If you decide on the latter, line the bottom of the tureen with cling film.

Place ripe berries in pudding tins (or tureens) and refrigerate. Place the gelatin slices in a bowl with a little cold water and let sit for a minute. Drain the water, and send the gelatin into a container along with the syrup. Place the container in a pot of water and simmer until the gelatin dissolves and a smooth syrup forms. Sugar can be added at this stage.Stir until melted, then remove from heat and set aside to cool for a couple of minutes at room temperature.

Remove the berries and wine from the refrigerator. The point of cooling fruits, molds and wine in the refrigerator is to keep the wine bubbles in the jelly and foam, sizzle, and burst in your mouth. Unearthly beauty! Pour the wine into the syrup mixture and splash it all over the berries. Some will pop up, but you can put them back in place with your finger so that they are sealed inside the jelly. This will keep them in the refrigerator better. Lock the molds in the refrigerator again for an hour. When serving, dip them in a bowl of hot water to melt the bottom layer of jelly and flip them onto a plate. You can serve jelly with sour cream, but no one complains without it!
