Ingredients

Pork (loin) 1 kg
Quince 1 PC
Apples 2 pcs
Cranberries (fresh / frozen) 1 st
spices for meat 2 tsp
vegetable oil 2 tbsp. l
onion 2 heads

Cooking method

  • Cut the pork into pieces about 2 cm thick. Make an incision in the middle of each piece to make a pocket. Pieces can be lightly beaten off with a frying pan. Cut the onion into half rings. Put the meat in a bowl, sprinkle with salt, spices, pour over with vegetable oil. Mash the onion well and add to the meat together with the juice. Put the pork in the refrigerator for 3 hours to marinate.

  • Cut the quince and apples into slices.

  • In the pockets cut into the meat, put a few slices of apples and quince, chop off the edges with a toothpick.

  • Grease a baking dish with oil. Put the onion in which the meat was marinated.

  • Put pork on the onion. The top can be lightly greased with mayonnaise.

  • Put in the oven to bake, occasionally pour over the allocated juice.
  • Grind the cranberries with a blender in mashed potatoes, rub through a sieve. Add sugar to taste and freshly ground pepper.
  • Take out the meat 15 minutes before it is ready. Cut the pieces to the filling and pour over the cranberry sauce.

Note

Cranberry puree is very thick and can be diluted with water. This time I got carried away and went too far with the sauce. I usually add less. It is better to peel the quince and apple.
