Parmesan cream with carrot chips

Ingredients

cream 33% fat 250 ml
Parmesan 140 g
curry 0.5 box l
ground smoked paprika 0.5 box l
carrot 200-250 g
olive oil for frying
coarse sea salt taste
freshly ground black pepper taste

Cooking method

  • 1. Bring the cream to a boil, add curry and paprika. Add finely grated Parmesan to the cream, stirring actively to heat over low heat for 2-3 minutes. Remove from heat, pour into portion molds, cool and refrigerate for solidification.
  • 2. Cut the carrots into thin slices and put ice water for 30 minutes. Then fold in a colander and dry well. Fry in small portions in a saucepan in olive oil until golden brown. Transfer to a paper towel and allow excess fat to absorb. Sprinkle with salt and pepper before serving.
