Eggplant in mayonnaise

Ingredients

Eggplant 2 kg.
Onion 800g
Garlic 2 heads
Mayonnaise 200g
Vinegar 9% 3 tbsp. l.
Vegetable oil 200g
Salt pepper taste

Cooking method

  • Cut the eggplants into large cubes, put them in layers, sprinkle with salt and leave for 2 hours until bitterness is released.
  • Coarsely chop the onion and sauté in vegetable oil.
  • Lightly rinse the eggplants and fry in parts until golden brown and put in a deep saucepan, sprinkling with garlic. Add fried onions, pepper, pour in vinegar.
  • Add mayonnaise and stir. Arrange in sterile jars and sterilize. Banks 0.5 l - 20 min. Roll up and wrap until it cools completely.
