4 eggs (room temperature)

1 tsp baking powder

Butter cream with Swiss meringue basic recipe:

5 proteins from coarse. eggs (room temp.)

200gr. fine sugar

180gr. oil (room temp.)

vanilla

How we do:

1. Whisk whites + sugar in a large metal bowl with a whisk or an electric mixer and place in a water bath, whisking continuously over medium. speed until the sugar is completely dissolved (by that time the proteins should have warmed up to 50-70 degrees);

2. Remove proteins from heat and beat at high speed, the mass should cool, become fluffy, glossy, keep its shape well.

3. We translate the mixer to medium. speed and patiently, piece by piece, add butter. No need to rush :)

4. The cream will become watery, do not be alarmed))) Mixer again at max speed and beat until the cream becomes thick, it may take approx. 10 min.

5. Add vanilla. All:)

For raspberry cream: chop raspberries with a blender, rub through a sieve, drive into the cream.

!!! It is very important that the raspberry puree is at room temperature, otherwise the cream will not be smooth.
