Brazilian liver

Ingredients

beef liver 0.5KG
bulb onions 2 pcs
bananas 2 pcs
White wine 100 ml
olive oil 50 ml
ground black pepper, salt taste
chili peppers (fresh) 0.5 pcs
parsley (fresh, chopped) 2 tbsp
juice of half a lime (lemon)

Cooking method

  • 1. Peel the liver from films and cut into cubes 3-5 cm long. Peel the onion and grate it on a fine grater, or use a blender to grind it into a homogeneous puree.
  • 2. Combine the onion puree with wine, olive oil, ground pepper and lime juice. Put pieces of liver in the resulting marinade and leave to marinate for 3-4 hours.
  • 3. Remove the liver from the marinade, shaking off the excess liquid, and fry over high heat until a light crust forms (3-4 minutes). Then pour the remaining marinade into the pan and fry for a couple of minutes (until the sauce begins to thicken). Add the banana, pre-mashed and mixed with finely chopped chili peppers. Reduce heat to low, season with salt, stir and add the second banana, cut into 0.5 cm thick slices. Keep on fire for a couple of minutes, add parsley, stir and remove from heat.

Note

The liver is very tender, with a piquant taste and bright aroma. Best served with rice.
