I want to add an original recipe on the topic: a cake called Sweets (with blackberries and passionflower extract)
looks like that
Sweet Cake
Ingredients:


dough.
1.15 gr. draining. room temperature oils
2.85 gr. powdered sugar
3.25 gr. almond essence
4.seeds from half a vanilla stick
5.1 egg
6.110 gr. flour
7.a pinch of salt (4 g.)


extract of paciflora.
1.80 gr. lemon juice
2.120 gr. Sahara
3.2 eggs
4.150 gr. cold drain. butter, diced
5.1 pasiflora (fruit)


decoration.
2 packs of blackberries (not too sour)
Cooking method:

Dough.
1. Mix the drain with a mixer. butter until smooth. Add powdered sugar and sugar. We continue to mix.


2. Then add almond essence, salt, vanilla seeds and egg. At the end, add flour and mix thoroughly for a few seconds, until smooth. At this stage, the dough should be lumpy


3. Take the dough out of the bowl and put it in a ball with wet hands (do not crush !!!). Roll out on a 1 cm disc and wrap with oilcloth.


4. Refrigerate for at least 2 hours.


5. Prepare a mold for baking, oiled or covered with baking paper, also oiled with drain. oil.


6. Roll out the dough to a thickness of 3 cm and place in a mold. It can be a ring with a diameter of 22 cm or personal small molds.
It is very important to correctly place the dough in the ring, leave the edges on the walls of the ring, thereby laying the rest of the dough exactly along the bottom and edges.


7. Make holes in the base (using a fork), cover and refrigerate for an hour.


8. Preheat the oven to 170-180 degrees. We bake the base for about 10 minutes, after which we take it out of the oven and use a thin knife to level the edges of the dough in the ring.


9. Return to oven for an additional 15 minutes. As soon as the dough has turned brown, we take it out and cool it.


Passionflower extract.
1. In a separate bowl, mix lemon juice, sugar and eggs and steam until the mass reaches 84 degrees (Good opportunity, finally, to buy a special thermometer !!!)


2. Cool to 55 degrees and return to mixer, add drain. butter and stir for 3-4 minutes.


3. Transfer to a bowl and gently add passionflower. Let it cool for at least 2 hours.




Before serving.
Fill the base of the dough with passionflower cream to the height of the dough itself, and put the blackberries on top. We return to the refrigerator before use.
You can garnish with fresh mint leaves.
