Liquor cake

Ingredients

Biscuit
Eggs 5 pieces.
Sugar 200 g
Vanilla sugar 1 sachet
Butter 250 g
1/2 lemon zest
Flour 250 g
Baking powder 1 sachet
Cream
Fat cottage cheese 250 g
Yogurt 200 g
Egg liqueur 150 ml
Cream 35% 500 ml
Sugar 125 g
Gelatin 10 g
Raspberry 300 g

Cooking method

  • In a blender, beat eggs, sugar and vanilla sugar until fluffy. Gradually add softened butter and zest. Beat everything until smooth. Add flour mixed with baking powder. We knead well.
  • We spread the dough in a lightly oiled dish and bake in a preheated to 180aboutFrom the oven for 30 minutes.
  • Cut the cooled biscuit into three cakes.
  • Beat cottage cheese, yogurt and liqueur with a blender until the grains disappear. Whisk the cream and sugar separately. Dissolve gelatin in a small amount of hot water and add to the curd mass. Add the whipped cream and mix gently. Divide the cream into 2 parts. Mix one part with raspberries.
  • Put the first cake in a split form. We spread the cream with raspberries on it. We spread the second cake, and on it the second part of the cream (without raspberries). We cover everything with the third cake and put in the refrigerator for at least 3 hours.
  • Before serving, sprinkle the top of the biscuit with powdered sugar.

Note

A fragrant cake with a very delicate cream and a slightly heady taste of raspberry and liqueur.
