Ingredients

Dough:
Flour 1.5 tbsp.
Cashew nuts 0.5 tbsp.
Walnuts 0.5 tbsp.
Raisins 0.5 tbsp.
Cane sugar (gur) or honey 2 tbsp. l.
Soda 1 tsp
Banana on the cake (overripe is better, it is softer) 2 pcs.
Vegetable oil 0.5 cups
Cream:
Lemon juice and zest 1 PC.
Banana 2 pcs.
Dried ginger pinch
Condensed milk or a couple more bananas half a can
Cottage cheese with a fat content of at least 11% 500 g

Cooking method

  • Turn on the oven at 180 ° C, let it heat up for now.
  • Dough:
  • To do this, grind bananas, sugar, cinnamon and vegetable oil. You should get a homogeneous mass. Separately mix the wheat flour with nuts, raisins and soda. Combine with bananas, mix thoroughly.
  • We spread it on a baking sheet or in a special form (I put it on a baking sheet), evenly distribute. The thickness should be about 1-1.5 cm. Bake for 20 minutes until tender.
  • Cream:
  • Option 1: Prepare the cream while the cake is baking. To do this, mix condensed milk, lemon juice, zest. Pour it into a blender, add bananas, mix until smooth.
  • Option 2: If we want crm without condensed milk, then mix bananas (4 pcs.), Lemon juice, zest and cottage cheese. I took 11% Belarusian cottage cheese in soft packaging. He's like sour cream.
  • Assembly:
  • We take the cake out of the oven, cut it in half. Since I baked on a baking sheet, I did not cut it lengthwise, but in half. Turn one half upside down (the lower side will better absorb our cream), spread with a thick layer of cream. Spread the second half of the cake on both sides, put it on top of the first cake. Cover the edges with cream. Top can be decorated with any fruit. We leave it overnight for impregnation. The banana cake is ready, serve it for the festive table!
  • Alternatively, the cream can be made from cottage cheese, raspberries and condensed milk. It turns out a thick cream.

But the cream, Elon, I think in both versions with cottage cheese, only if in the first version it is cottage cheese, condensed milk, zest and juice, then in the second - also cottage cheese, zest, juice and bananas (instead of condensed milk). I made option # 1.
