Carrot cupcake

Ingredients

Peeled carrots 150g.
Vegetable oil 50g.
Sugar 100g.
Water 150g.
Wheat flour 150g.
Baking powder 1h l.
Raisins 100g.
Oat flakes 25g.
Vanillin 1 \ 4h. l.
Salt pinch

Cooking method

  • Grate the carrots or chop with a blender. Transfer to a saucepan, add sugar, oil, salt and water, while stirring, bring to a boil, cool until slightly warm.
  • Mix flour with baking powder, flakes, raisins, vanilla.
  • Mix both mixtures with a spoon. The dough turns out like thick sour cream. Add more flour if necessary (I did not add).
  • Ideally, you should use muffin tins (10 pcs.), But I don't, so I baked in one small silicone mold. You can spread the dough up to the top; it does not rise much during baking.
  • Bake in an oven preheated to 200C until browning. I’m even afraid to write, because it took me about an hour. Focus on your oven.
  • Leave the finished cake in the form for 5 minutes and remove.
  • Already during baking it smelled sooooo delicious !!!! The crumb is wet. But it looked ugly, I didn't even intend to exhibit. I haven't tried it yet. Delicious!!!! Carrots are not felt. I will definitely repeat it already in portioned molds !!!

You're welcome, but remember that my cartoon is powerful. I bake biscuits in it literally 40 minutes. Otherwise, they may burn below!
