Ingredients

flour c. from. 210 g
baking powder 1.5 tsp.
butter 82.5% 84 g
vanillin
almond essence
sugar 150 g
eggs 140 g (3 pcs. Small)
almonds (or hazelnuts) 140 g

Cooking method

  • who knows - Maida, as always, is on top! magically delicious, tender, fragile biscuit croutons. almond aroma, vanilla, creamy crust ... ehhh ... goodbye waist !! )))
  • preheat the oven to 200C. line the baking sheet with foil or non-stick cloth.
  • sift flour and baking powder together, set aside.
  • in a small bowl, beat the butter. add vanillin and almond essence. add sugar in a thin stream, beat for 2 minutes.
  • Break the eggs into a small bowl, being careful not to damage the yolks. in the butter-sugar mixture, first add the yolks one at a time, knocking out until smooth, then the whites according to the same scheme.
  • at the lowest speed of the mixer, gradually add the flour mixture, mix for a short time, only until smooth, so as not to tighten the dough. knead the nuts by hand.
  • Put on a baking sheet using 2 teaspoons - put one in, scrape off the other - in the form of sticks. We don't level anything - everything will level out when baking.

  • bake at 1/3 from the top of the oven, 15 minutes (or until golden brown) at 200C. the top will spring.

  • transfer to a wire rack, cool slightly. cut at an angle into slices 1.5 cm thick. Put the slices up on a baking sheet, again in the oven. dry for 25 minutes at 150C. then turn off the oven, slightly open the door and leave for another 10 minutes. then remove and transfer to a wire rack to cool.

Note

I love raisins in baked goods, so I took 100g of almonds and 50g of fine dark raisins. and I didn’t peel almonds .. only chopped coarsely

but the maida had a recipe for other crackers, and under them it was directly written - a la biscotti. so I'll make them somehow, put them out, and then we will compare

And I came with a report. I've already cooked them several times: with chocolate drops, and with dried fruits, and with nuts. And the last time we went to experiments with flour: I replaced 1/3 of the flour with oatmeal and added seeds (sunflower and flaxseed) - it turned out very well, so useful.
