Cooking method

  • Bake eggplants and tomatoes in the oven (you can grill), you can boil the blue ones in salted water, and take fresh tomatoes. Remove the skin. Grind (blender, or meat grinder, or knife) There, onions, garlic and chili peppers, salt to taste, + 2-3 tablespoons of vegetable oil, All-Bon appetit !! You can also add fresh bell peppers.

This is our favorite eggplant caviar recipe. I remember him from childhood in the old Odessa courtyard. Only I prefer to bake eggplants in a dry frying pan until the skin burns, then they turn out to be "smoky". And after baking, I stand it for a while, so that the glass of the bitter liquid from the eggplant. Then I clean the skin and chop it with a knife, I do not purée. And I use only fresh tomatoes. I rub on a beetroot grater so that the skin remains in my hand, and strain in a mesh colander. The tomato juice flows down, and I put only the pulp into the caviar. Therefore, caviar is never liquid. You can put sweet baked peppers or not - as you like. I cut the onion very finely, and rub the garlic on a fine grater. Salt, pepper, sugar (if requested) and sunflower oil - preferably aromatic, of course. Tomatoes, of course, should also be fragrant steppe, absorbing the July and August sun. It turns out super caviar!
