Eggplant Spice Magic

Ingredients

eggplant 2 pcs
tomato 2 pcs
Red onion 1 PC
garlic 10 teeth
cumin 1 tsp
coriander (ground) 0.5 tsp
vegetable oil for frying
salt to taste

  • 1. Bake eggplants in the oven until half cooked. Peel and cut into large enough cubes.
  • 2. Blanch the tomatoes in boiling water for a couple of minutes, remove the skin and seeds, cut into small cubes.
  • 3. Peel the onion and garlic, cut the onion into small cubes.
  • 4. Pour vegetable oil into a preheated frying pan and put garlic cloves. Fry from until golden brown and remove from the pan. Add cumin. Fry for 30-60 seconds over high heat, add onion and reduce heat to low. Fry until transparent. Add eggplant cubes and fry everything together over medium heat for 7-10 minutes. Add tomato cubes, salt, add coriander, reduce heat to low and cook for another 5 minutes.

Note

This dish is delicious both hot and cold. You can sprinkle the finished dish with fresh chopped herbs (cilantro, parsley). Sprinkle with finely chopped fresh garlic if desired. Eggplants are very tender, spicy, they just melt in your mouth. Try it, I highly recommend it!
