I bought this model yesterday. First, we tried to bake white bread according to the recipe from the instructions. It turned out sooooo thick dough, more water was added during the kneading. In general, it turned out to be a very dense cake, not bread. In principle, even delicious. Then I found another recipe for white bread in the internet, it was all different, a different dosage and the order of laying the ingredients is the opposite. They baked in the first mode, the dough did not rise at all and was not completely baked. It turned out more like a hard cake.

Did you get normal bread in this oven? I don't understand what's the matter, or the recipes are wrong, or the products are bad ...

I'll start with the fact that my husband bought me this HP about 1.5 years ago, he wanted to eat homemade bread. As a baker I am zero, since I have never dealt with this business. As for the baking process itself. I bake with Pacmaya yeast, I don't use any intant ones (I'm sorry if I didn't write it correctly). I put the ingredients in the following sequence: water with 1.5 cups, then pour sugar into one end of the cup, add salt to the other, add yeast to the corner to the sugar and pour flour on top (all ingredients except water as per the recipe for 750 gram bread) in flour with a spoon I make a hole in the corner where I poured salt and add oil, then I smooth out the hole. We have a standard recipe for 750 gr. with the addition of more water and raw yeast, something similar to normal bread is already beginning to turn out, but there is not enough baking inside.

Here's what I understood and this is what I got:

I made the next time for which the dough is suitable is about 2.5-3 hours, based on this I chose the program for baking bread coarse grind, your recipe was taken as a basis for baking Admin seems to be "Italian bread", I apologize that if I write somewhere wrong, there is so much information in my head and I still have a sore throat and fever!

I am writing further the main program in mine for about 3.18 minutes, and this time is not enough for baking this bread, so I took coarse grind
it takes longer.

Now about baking:

inFiltered ode at room temperature - 270 ml
sifted flour turned out 2 cups of my HB and plus 13 tbsp. l. again, spoons from HB (why I will explain this later)
sugar 1.5 tbsp. l.
salt 1.3 tsp
vegetable oil 2 tbsp. l.
I use Packmaya yeast, pre-soaked 1 tsp. in warm water for 10 minutes.
and we do everything "under the knife", that is, we cut off the excess ingredients with a knife in the process of the bookmark from the bowl and st. l and h. l.
Reading your article here on the forum, Admin realized that in order for the bread to turn out good, you first need to learn how to make a bun out of dough in HB, so that it turns out in the best way, then, based on the recipe for the indicated amount of water, it is better to put less flour, and then add to the dough kneading missing to form a kolobok:

I took a bucket for HB, poured water, then butter, put at first 2 cups of flour (I have it 300 ml), made 3 indentations in the flour at a distance, added salt, sugar, yeast and turned on HB, first the heating process went, then kneading here then I began to add flour and got 13 tbsp. l. Since there are 2 scoops in HB, some of the flour did not stick to the dough at first, so for the correctness of the experiment and for accuracy, I had to take and manually stir the bun!

After that, I no longer climbed into the HB, she baked further herself. I will also clarify I took the program of coarse grinding, weight - 750 g, color, dark, otherwise it is not baked.

I have the same bread maker, only with a maximum bread weight of 750 grams. I would like to share my comments. In the standard mode, I get quite decent bread, only at first it rose from me every other time, until I once noticed that in those days when the bread did not rise, my mother-in-law was sitting in the kitchen and opening the window !!!

And so the first rule - DO NOT OPEN THE WINDOW WHILE BAKING THE BREAD! room temperature d. b. constant, because depending on this temperature, the bread machine chooses whether it needs to additionally heat the dough to "rise".

Second rule. which I learned when I myself did not have a bread machine yet, my neighbor bragged about it and put a big emphasis on it! further, I read the same advice in the instructions for my x / n - DO NOT ALLOW CONTACT OF DRY YEAST WITH WATER !!! I add the ingredients in this order: water, salt, sugar, butter, flour and only yeast on top! and I like to add 2 more tbsp. l. bran (750g per loaf). Yeast in the instructions recommends the type of saf-levure and I found them in our city - a white-blue package (package) with a red inscription SAF-LEVURE, below - active yeast, real French quality. The mother-in-law also confirmed that this is the best yeast for bread makers.

Third tip for choosing a mode. I myself have not tried the "coarse grinding" mode, but I have tried the "White bread" mode, I have it for 3 hours 40 minutes. that is, the maximum possible time in my opinion. In this mode, the bread rises best !!!

The lid of the bread maker can only be used during kneading and molding, and in no case should it be opened for a second during lifting, this will inevitably lead to that. that the bread will not rise or will not rise enough!
And while typing I remembered something else. At the end of baking, the bread is still hot, especially the crust can be greased with vegetable oil, from this the crust will shine very beautifully and appetizingly (this is usually done in bakeries)

More successful baked goods on deep roasts, but crumbles in the middle. Now I'm trying out recipe instructions to bake sandwich bread. I tried baking recipes even for other models of bread makers. At first, it was embarrassing that there is much less time in programs than in other bread makers. But on the "Fast bread" mode 1-20 hours baked perfectly bread on semolina, the "Yeast dough" mode 1-30 hours is enough to rise. Yesterday I tried the "Refreshing Pastry" mode for baking a curl roll with poppy seeds and raisins. By default, the program is set for 1 hour and this was enough for baking this product. But I like baking on the French Bread program more. I tried "Bread for Sandwiches" according to the recipe instructions for the bread maker. She baked Easter cakes according to several recipes, only I had to recalculate the recipe for my model by weight. The main thing is not to be afraid to risk trying bread recipes for other models of bread makers! As they usually say - "The eyes are afraid, the hands are doing." Sometimes I have to interfere in the formation of a bun, pick flour from the sides of the bucket, add flour, and in general, even recipes with instructions did not disappoint me.
