no, the oven is electric and sooooo small. The bucket does not fit in there. Plus, I had to leave and I couldn't keep an eye on the oven and turn it off in time. And so I then put the HP on baking 1h10m and after 2 hours I returned and took out the finished bread .... I don’t worry about the roof in this case, I understand that it was overstayed. But my husband doesn't care about the roof at all, the main thing is taste.

I baked your bread for the third time, only now completely with sourdough, having slightly counted the amount of water and flour. It turned out so delicious and beautiful. Now, from gray sourdough bread, this is my favorite.

If someone is interested in the recipe for sourdough Peasant bread, then here it is:

For a small loaf:

Rye sourdough at its peak of growth - 300 ml.

Water - 55 ml.

Milk - 100 ml.

Sugar - 1 tbsp. l.

Salt - 1.5 tsp.

Sunflower oil - 0.5 tbsp. l.

Wheat flour - 310 gr.

Rye flour - 20 gr.

Anna-Mish, you are welcome! But the fact that the light was turned off is bad

tatyanochka, thanks for the starter peasant

And now I bake all bread only with sourdough. True, there are much fewer recipes for sourdough breads, so I take recipes for yeast breads here, count them for sourdough breads and enjoy the delicious bread. I baked yours for the first time on sourdough with yeast, the second time on wheat sourdough, and the third on rye. All options were delicious, but the third one I liked the most.

Hello! For the first time in my life I want to bake bread with rye flour, so I might ask a stupid question, but an important one for me. Please tell me, is rye flour sifted? It seems that I looked at the topics about rye bread, but did not see about sifting. I sifted it along with wheat flour, but the husk remained in the sieve, as I understand it. Perhaps she's also useful?
Admin

Any flour must first be weighed correctly and only then sieved - any flour!

Flour can be of different grinding, including peeled or whole-grain rye flour, which includes bran, so they remained in your sieve. After sifting the flour, this "husk" must be sent to the total sifted flour.

For flour and other ingredients for bread, there is a section called Ingredients for baking bread https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&board=132.0 we read and remember

svetlanna, Tatiana answered more than fully. There is nothing more to add.
Admin, Tatiana, thank you very much!

I did so. I sifted rye into wheat after weighing, and I have 4g of bran left in the sieve, as you say. But, unfortunately, there was no way to wait for an answer, and I threw them in the trash. Now the bread is cooling down. It seems to me that he did not rise well, I took the amount for a smaller bun.
Many thanks for the help! Of course I will repeat the pastries over and over again.

This is how it turned out.

Quite decent bread I liked it myself
svetlanna
Thanks for the support! I liked it very much. The taste is similar to the bread of our farm called "Monastyrskiy". Before, before buying a bread machine, I always bought it when I found it. Now I can make the same oven myself. I like it with butter and tea.
clever girl!
went to the oven)))
Ksyushk @ -Plushk @
svetlanna, in spite of all the "adventures", the bread, in my opinion, was a success, which Tatiana confirmed, but she can be trusted.

Please tell us about the bun, will it stick strongly, smear on the bottom of the bucket? THANK YOU !!
Ksyushk @ -Plushk @
Elena, this bread contains 3 parts of wheat flour and only 1 part of rye. Therefore, the rule of the wheat bun works here. That is, it does not smear on the bottom of the bucket and does not stick to hands / walls.
Elena K
Thank you very much, I will bake soon

Thanks for the delicious bread recipe! I baked it in a Zelmer bread maker. This is my 2nd bread (the first one was baked according to my own recipe from the instructions). Everything worked out great. I am full of enthusiasm and want to bake something else!

Olga, bake to your health! The bread is really delicious. And thank you for your feedback!

won't rye malt spoil this bread? Maybe you already tried it - tell me how much to add and how - just pour or brew malt? I really liked your original recipe - now I know what to do with the purchased rye flour. Until the moment I got acquainted with your recipe, I baked rye bread, namely custard according to the recipe for the panasonic sdzb 2502 bread maker is extremely rare - the reason for this is the painfully thick crust on the finished loaf, I had to wait until the moisture from the crumb passes into the bark and softens it - so that do not worry about the safety of teeth after eating. the result of your recipe is a pleasant bread with a thin crust and tasty crumb, I asked about malt - just for the sake of the urge to experiment, to find something new, tasty. If you can offhand advise some other breads with the addition of rye flour, where the output is a thin crust - I will be very grateful. Yes, by the way, the second time when baking according to your recipe - I didn't put milk powder, - I didn't notice the difference - thereby, I made the baked loaf cheaper. baking on the main fast mode - 2 hours, the crust is dark.

Dry malt, 2h l-1st. l no problem, just pour. It will only taste better
There are more options for such bread with whole grain flour, look on the forum.
Ksyushk @ -Plushk @
Dmitriy, thank you! Many people really like bread.

I bake with plain milk. I like it this way more than with dry.

As for malt, Alexander has already written. Be guided by your taste. But I think up to 1 tbsp. l. it will not hurt completely. Although I myself have not tried this particular recipe with malt. Bran, different flour ratio - yes. Malt is not.

I have such a rye wine Double wheat-rye vytushka I was somehow too lazy to mess with her. And I kneaded everything in one heap at once and baked it in one loaf. See if you like this recipe too.

Ksyushenka, thanks for the recipe !!!
Khlebushko rose above the bucket True, the roof is crooked. This is my first bread with rye flour. Added 2 tbsp. l of bran, did not reduce flour. Hope it worked out. I will try to take a picture
Ksyushk @ -Plushk @
Lenochka, thank you for your trust!
And the roof was twisted because of the bran. It was necessary to add one, maybe two teaspoons of water and then everything would be perfect.
Elven
Ksyusha, bread is just delicious Tomorrow I will show the pictures. And the roof just rose from one side more than from the other, no big deal

Here are the promised pictures We liked the bread very much, I will definitely repeat

I also baked this bread yesterday. I was too lazy to count the volume of my bucket, so 15 minutes before baking I had to interrupt the process, because I climbed almost on the roof, made cuts and turned on baking. As a result, the roof collapsed, but the taste of the bread did not suffer. The result is airy, very soft bread. I love gray bread, so I rewrite the recipe in my favorite recipe book (after counting). ... Auto RU
Ksyushk @ -Plushk @
Lenochka cut hot?
Try to add a little water with all other components, it should be smoother.

Farida, I am very pleased that you like the bread. Bake to your health! This is also our favorite KP bread.
Elven
Yeah, hot. No, no water is needed, probably just the bun was lying unevenly, so it rose unevenly. Today I baked it again, already by 1 kg. Such a handsome man came out, it is worth cooling down. The roof is flat this time. Weighed 1060g
Ksyushk @ -Plushk @
Lena, at least have time to eat?
Elven
Ksyusha, joking or what ?! I come home from work, load the bread maker, by 9-10 pm it is ready, the next day (by the time I come home from work) it’s already bye-bye A shop one loaf was enough longer
Ksyushk @ -Plushk @
Lena, well, let them eat for health, you will get less.
Elven
gee, I won't give my ration to anyone, it disappears so quickly, because it's delicious. Although from yesterday's kilogram loaf a little less than half is left. Apparently, a kilogram is our volume

Ksyushk @ -Plushk @, hello) Thank you very much for the delicious bread recipe !!! I baked it for the first time today, the top sat down a little, but it did not affect the taste! Thanks again!

And in our family, such bread has taken root, I have it in recipes for the Mulinex bread maker, though there is a dough for the night, but I bake right away without dough and of course, like everything I fantasize a little, then I bake with different oils (sunflower, olive, grape , sesame) and I can add a spoonful of sesame or spoons of flax or sunflower seeds, I can also add rye molasses. It always turns out and is always very tasty, I would even say that this is the main daily bread in our family, and from white, simple white bread, the same recipe from a booklet for a bread machine.
