Mushroom lasagna

Ingredients

Dough:
Flour 400g
Eggs 5 pieces.
Salt 1 tsp
Filling:
Chopped meat 500g
Onion 1 PC.
Water 1 glass
Tomato paste 1 tbsp. l.
Cheese 150g
Mushroom sauce:
Champignon 200g
Flour 2 tbsp. l.
Rast. oil 4 tbsp. l.
Milk 1 glass
Mushroom broth 1 2/2 cups

Cooking method

  • Minced meat: Pass the meat through a meat grinder and fry with finely chopped onions, add salt and pepper. Simmer until the juice evaporates. Add a glass of water with a tablespoon of tomato diluted in it and cover with a lid, simmer until the moisture evaporates.
  • Dough: Pour the sifted flour on the table with a slide, make a depression in the form of a funnel, add eggs, salt. Knead the tough dough. Leave on for 20 minutes. covering with a towel. Divide it into 9 parts, roll it into thin sheets of 1.5mm. Cut into squares. Cook the dough in salted water with the addition of vegetable oil for 15 minutes.
  • Sauce: Boil mushrooms in 3 cups of salted water, drain, cut. Fry mushrooms in rast. oil. Spread flour for growing. butter (2 tablespoons of flour and 4 liters of butter) dilute with a glass of milk, and 1 1/2 mushroom broth. Boil the sauce for 5 minutes. add mushrooms.
  • On the bottom of the mold, apply a thin layer of sauce, put a sheet of lasagna, pour over the sauce, put the minced meat filling and grated cheese. And one by one continue the same further. The top layer consists of the sauce, diluted tomt. pasta with water and grated cheese.
  • Bake in the oven for 50 minutes.

You do not need to cook the lasagne, it will cook itself when baked. I advise you to take two varieties of cheese - parmesan and mozzarella (at least domestic). Without parmesan it will be bland, and mozzarella gives a creamy taste. If you like authentic cuisine - no tomato paste, we make salsa: blanch half a kilo of tomatoes, peel and cut to remove the seeds. Grind in a blender, adding a clove of garlic and half a bunch of basil. Accordingly, fry the minced meat in olive oil with onions, fill with salsa and simmer for 1.5-2 hours under the lid. You can add 0.5 l of bechamel before putting the minced meat in the lasagne. Grease the top layer with béchamel and sprinkle with parmesan.

We didn’t use tomato paste, we got by with homemade tomato juice; Bechamel was cooked as expected with nutmeg. But parmesan and mozzarella were not found, well, call, they cost Russian ones. I believe that it tastes better with them, but finding Parmesan with us, and even real parmesan, is difficult, and it will cost like two wings from Boeing. Still, it turned out very tasty, ate and praised.

Nothing stuck together, after cooking, cooled and unwrapped the dough strips calmly. At the second cooking, I added vegetable oil to the water again.
