Cupcake "Banana + Cherry"

Ingredients

Softened butter 100g.
Sugar 175g.
Eggs 2 pcs.
Milk 3st. l.
Wheat flour 225g.
Baking powder 2h l.
Cinnamon 1 \ 2h. l.
Ground ginger 1 \ 2h. l.
Peeled banana 1 PC. (110g.)
Pitted cherries 200g.

Cooking method

  • Mix flour with baking powder, cinnamon and ginger.
  • Mash banana with a fork and puree.
  • Grind the butter with sugar. Beat in eggs one at a time. Add flour mixture, banana puree, pour in milk and stir until smooth.
  • Stir in the cherries. I had it frozen. I defrosted and dried it beforehand.
  • Place the dough in a greased pan.
  • Bake in an oven preheated to 180C for 30-45 minutes until golden brown.
  • Cool on a wire rack.
  • Cupcake "Banana + Cherry"
  • Very tender crumb with a crispy crust !!! Plus the last 33rd Chinese warning for such a small portion. Next time I will increase it by 1.5 times.
