The smell, of course, is awesome :) Now I want to find a suitable program for my usual sponge bread with a minimum of yeast, but it's very inconvenient that the programs are not scheduled in stages, and they are short. While using Kneading, then remove the scoop, select Rise with Yeast, then form the bread and AU3.

I adapted the oven on rye sourdough here according to this recipe.

At first, I baked on the AU8 program, but the leaven was not strong enough and the bread turned out to be fine-porous, but tasty.
Now I do this:
I put the ingredients according to the recipe
Wheat flour 230g
Rye flour 100g
Sourdough 200g
Salt 1 tsp
Sugar 1 tbsp. l.
Dry malt 2 tbsp l.
Vegetable oil 1 tbsp. l.
Liquid (kefir 100, milk 50, water 50) 200 ml.
Sunflower seeds 30g
Raisins 60g

Then I put the AU8 program for 5-10 minutes, so that everything gets mixed up. I stop the program, turn off the oven. With my hand moistened with water (so that the dough does not stick) I level the surface. I give it to rise in a closed oven, depending on the power of the starter culture, from 1 to 2 hours. When I'm in a hurry, you can turn the baked goods on and off for a few seconds (which would rise faster in a warm oven). Baking: I include baking with convection from 180-200 degrees. minutes for 45-50.

After such bread, I don't feel like shopping at all. And if a piece is not finished, such sourdough bread can lie for a week and not spoil.

We use both the cousin and the oven - in the cousin, the bowl is larger in diameter.
