Peel the zucchini, remove the seeds, cut into cubes (with a side of 2 cm). For a kilogram of zucchini prepared in this way, you need 3 lemons, also peeled and diced, 2 kg of sugar and 2 glasses of water - they are used to prepare syrup. When the syrup boils, put the zucchini and lemons in it - for 5-6 minutes. Then put the zucchini in jars, and boil the syrup until thick and pour over the zucchini with lemons. To make it even more diverse, you can add 100 g of any berries or fruits to the main components.

And I, and I, too, just love zucchini jam! Having tried many recipes, I stopped at one: 1 kg. diced zucchini-juice and zest of 2 large lemons + 1 kg. Sahara. Put everything in a saucepan and leave overnight. Cook in the morning. Cooking either in one go, about 30 minutes, or multiple times (3-4 times), each time bringing to a boil, let it cool completely and again bring to a boil, and so 3-4 times. I also like to add a natural vanilla pod to this jam, then there is no need for zest. And I also prefer sugar to "greedy", for 1 kg of zucchini-0.5 kg. sugar, it tastes better to me.

So today I just turned out great - elastic candied fruits which are not always there.
