Blueberry sandwich spread

Ingredients
Unpeeled lemons 2 pcs.
Apples 1 kg
Bay leaf (optional) 2 pcs.
Blueberries 600 g
Gelatin sugar 1 kg
Butter 15 g
Cooking method

1. Pour the juice of the lemons into a saucepan and add the finely chopped zest. Chop the apples, add to the lemons and pour 800 ml. water.
2. Add bay leaves and bring mixture to a boil. Reduce heat, close the pan and cook the contents for 1 hour, stirring so that the mass does not burn.
3. Pass the cooked fruits through a sieve into a large saucepan. Add blueberries there and bring mixture to a boil, stirring constantly. As soon as the mixture boils, immediately reduce the heat, add sugar and stir until it is completely dissolved.
4. Bring the mixture to a boil again, let it simmer for a while until it thickens. Stir in the oil. Fill the jars immediately and close the airtight lids.

Note
Sandwich paste is a homogeneous thick mass that is prepared differently than confiture and jelly. The sugar content can be relatively high, like in jam, and quite low, if it's a dietary product. Many pastes are sweetened with honey instead of sugar.

Blueberries, which have an unmatched aroma, contain a small amount of pectin, therefore they do not solidify well during cooking. But if you cook it with apples and lemons, you get a sandwich paste of the desired thickness.

the recipe is excellent! did it many times. then we like to make blueberry tea out of syrup .... Only at the same time it is not open for long, it is better to do it in small jars.
