Ingredients

Cooking method

  • Salad dressing: vegetable oil, lemon juice (vinegar), salt, sugar - all to your liking
  • Peel, scrape pork ears with a knife, wash, boil over low heat in water with a mixture of aromatic herbs for 2-2.5 hours. Willingness to check with a knitting needle. I boiled the ears in a multicooker CUCKOO 1054, Multi-cook mode, 110 * C, 20 minutes.
  • Cool the finished boiled ears without removing them from the water. Remove the ears, put in a bowl and cool in the refrigerator, while part of the broth will harden to jelly.
  • Boil the eggs "in a bag" so that the middle of the egg, yolk and white remain stringy. The boiling time for such eggs is 3.5-4 minutes.
  • Break the eggs in half, take out the soft, liquid yolk and white into a separate cup, and leave the boiled white on the shell of the egg.
  • Peel the egg white and cut into strips.
  • Add aromatic vinegar, vegetable oil, salt, sugar to the soft yolk, mix until smooth, taste, correct the taste. I recommend making the dressing richer, more spicy.
  • Cut the pork ears into thin long strips along the entire surface of the ears.
  • Fold the slices into a salad bowl, add the egg dressing, stir.
  • add chopped parsley, egg white with strips to the slicing, mix gently with your hands, taste, salt, correct the taste.
  • Serve salad with hot potatoes, fresh vegetables. Serve the salad at room temperature.

For a spicier salad, you can add salted gherkins to the salad.
