Zucchini caviar with mayonnaise

Ingredients

peeled zucchini 5 Kg
carrot 1 kg
onion 1 kg
mayonnaise 450 g
tomato paste 750 g
vegetable oil 200 g
granulated sugar 100 g
salt taste
pepper taste

Cooking method

  • Cut the peeled zucchini into cubes, three carrots on a coarse grater, put in a saucepan and cook until softened. We drain the water. Finely chop the onion and fry in 200 gr. vegetable oil until golden brown. Grind boiled zucchini with carrots, as well as fried onions (using a meat grinder, but it is better to use a blender). Add mayonnaise, tomato paste, sugar, salt, pepper to the resulting homogeneous mass and cook for about an hour. We put the hot caviar in hot jars and roll it up. Bon Appetit!

Note

Output - 10 half-liter cans.
I recommend the "Krasnodar" type tomato paste in half-liter glass jars.
For pungency, you can add a couple of pinches of ground red hot pepper.
