Kifle with cheese (Master class)

Ingredients

Dough:
Whey (milk) 200 g
Sugar 2 tbsp. l.
Fresh yeast 10 g
Salt 1 tsp
Butter 20 g
Wheat flour 300 g
Powdered milk 2 tbsp. l.
Filling:
Any cheese 150 g
For lubrication:
Egg 1 PC.
Milk 1 tbsp. l.
Vegetable oil 1 tsp

Cooking method

  • Grind yeast with sugar, pour into a bucket of HP. There is also whey (milk), butter, flour on top, milk powder, salt. "Dough" mode (1h 30min.)
  • After a while, put the dough on a silicone mat. Divide the dough into equal balls - the amount depends on the size of the bagels you want. I divided it into 10 parts.
  • Cut the cheese into thin slices. I cut with a vegetable peeler.
  • Kifle with cheese (Master class)Roll each ball with a rolling pin into an oval 3 mm thick, put a plate of cheese in half (I put 3 pieces), make 3 longitudinal cuts on the other half without cutting the dough to the end.
  • Kifle with cheese (Master class)Roll up into a roll not very tight, starting from the side with the filling.
  • Kifle with cheese (Master class)Pinch the edges. Place seam side down on a baking sheet lined with baking paper.
  • Let the distance be 15-20 minutes. Before baking, brush with egg, beaten with milk and butter.
  • Bake in an oven preheated to 220 ° C for 10-15 minutes. Cool on a wire rack.

Note

Kifle, or as they are affectionately called in Bulgaria kiflechki, are rolls with various fillings (sweet and not). Can be made with ham, marmalade, cottage cheese, etc. Milk can be used instead of whey.
