Ingredients

kefir 100 ml
eggs (yolk only) 1 PC
sugar 2 tbsp. l
sunflower oil 25 g
sour cream 1 tbsp. l
flour ~ 200-250 g
baking powder 1 tsp
salt 1 tsp
filling
walnuts 50 g
brown sugar 50 g
cinnamon and other spices taste
butter (softened) ~ 50 g
grease before baking
egg yolk 1 PC
water 1 tsp

Sift flour and mix with baking powder. Pour warm kefir into a bowl, add butter, yolk, sugar and salt. Stir with a fork or whisk. Gradually add flour in parts and knead into a soft dough. The dough should not be steep, it may stick a little to your hands. Sprinkle it with flour and collect the dough into a ball, cover and leave at room temperature for 30-40 minutes.

On a floured surface, roll out the dough thinly into a rectangle. With this amount of dough, the size will be approximately 36x26 cm.

Grease a layer of dough with softened butter, sprinkle with chopped walnuts mixed with sugar. After sprinkling, roll the dough well with a rolling pin.

Divide the smaller side of the dough into three parts and make two cuts. To get a puff pastry, start folding the dough. First with one,

Turn the resulting square onto a layer of dough, make cuts on both sides and repeat the whole process again.

Lubricate the workpiece with yolk and water and apply the drawing with a fork. Then we bake in an oven preheated to 180 degrees until golden brown for about 30 minutes.

Note

The dough can be made without sour cream, then increase the amount of kefir. Instead of baking powder, take soda (0.5 tsp). I did three versions of the test. With soda, which I extinguished in kefir, with baking powder, with soda, which I added to the ready-made dough in parts.
For this recipe, the version with baking powder seemed to me the most successful.
