I use the yolks in the following filling for the pie:

3 yolks
5 tbsp. l. corn starch
1.5 tbsp of water
3 large lemons
10 tbsp. l. powdered sugar

We mix starch with water. Lemon through a meat grinder or in a blender, if you don't like bitterness, then zest plus juice. Add this all to the starch. Beat the yolks with icing sugar. Put the lemon-starch mass on the fire, bring to a boil. Stir so as not to burn. Add yolks, stir. The mass should thicken.

Combines with any test. Even with lazy shortbread (grind cookies with butter in a blender and crush to form). Bake the filling for 20 minutes.
