100g butter
20g fresh yeast
75-100g sugar
and 7g salt
first I knead for 5 minutes at 1, then I leave for 10 minutes, then I set the timer for 15 minutes and stir at 2. At 6-7 minutes I stop, give the machine a break, while I rake the dough from the hook and from the walls into the middle, maybe a drop of flour I will add it if it is very sticky, and then without a break, until the machine itself stops and a smooth dough is obtained, almost not sticking to the bottom, the temperature at the end of the batch is 31 degrees

This usually takes me 12 minutes. I don’t rake anything, I don’t remove it from the hook, I don’t clean the walls - everything and so it gradually interferes with the whole.
