We tried the cake today. The taste is wonderful. A very airy, straight weightless cake. I added alternating coconut flakes, peanuts, grated iris to the sour cream between the cakes. It turned out not bad. The top of the dress was decorated with cream - wet meringue. So, in my opinion, this cream is absolutely not combined with this cake - it spoils all the airiness of the cake.
Natalusik
Thank you very much to the author for posting the recipe here. Yesterday I finally made a cake, I looked at it for a long time, and I doubted everything, and the reviews are good, but somehow everything is simple, in the photo there is an ordinary cutter, but I did it, and really - very tender, tasty, juicy. I also gave a little grated lemon zest in the dough, the cream came out sooooo much, I thought the dough would come out when it saturates everything, but no - everything is very tasty, I got 6 cakes, but I probably gave a little more condensed milk in the dough, very thin, in general - not the last time, I'm sure
NatalyaN
Natalusik! I'm glad you liked the cake.
laxy
baked for a long time (about three months ago), but toluo now realized that she had not posted the photo. Getting better
Milk girl cake
Rita
laxy !!!!!!!!!! Why not in this topic, or in Prague, there is no assessment of the taste of cakes? !!! I do not play like that .

Unfortunately, I came without a photo, but with detailed reports. I'm baking this cake for 3 years, this is from those years that I remember exactly. I tried absolutely all the creams that were already listed above and chose custard for myself, but this is for myself and always with overnight sedimentation.Any dough with condensed milk takes time to absorb the moisture of the cream, but then it reveals its flavor bouquet completely. I put a milk girl on almost all wedding cakes in the third tier and always the third tier passes with increased interest and applause. But I spread the cakes thinly thinly. at least 6, or even 7 pieces, because the dough with condensed milk and soda tends to increase no less than THREE times, if you smeared a millimeter, you get three, and thin cakes are beautiful in the cut and are better impregnated. For wedding tiers in this cake I use whipped cream, but somehow they seemed to me rather simple in this combination, and even for a celebration, and I put cream on each cake, then with a stack of 3 millimeters with a tip I skimmed off the cream in a diameter of 10 cm, 15 cm 20 cm It turned out, like circles on the water, sort of grooves, and these grooves were filled with topping - in the first - cherry, in the second - kiwi, in the third - strawberries. And so all the Topping cakes, as you know, have a very pronounced taste and even this little is enough for the cake to acquire an unforgettable shade And in the cut, all 7 cakes are obtained at the same level - points of different colors - cherry, green, raspberry - in general a cheerful cut, and the taste turned out to be neither monotonously dairy for a festive cake I noticed one more thing - the third tier is eaten by young people in the morning after the wedding (this means the cake has gone for the third day) and always with delight I concluded that the more it costs, the tastier it becomes! The only bad thing is that such a long sucks can only be carried out at a wedding, it is almost impossible to protect household members from attacks on the cake at home!
The cake is very tasty ... but you need to learn how to bake it correctly, the cake should be thin and of the same caliber! And if the cream is not enough, then it will be noticeably dry. It is very important to catch and maintain the correct proportion!
NatalyaN Thank you so much for the recipe, because such a cake will decorate any table - and a simple tea party and an exquisite dessert !!!!
As soon as I do it, I will supplement the information with photos again.
Elya_lug
Well, everyone has a cake, but I don't. I baked it back in February, I took the recipe on other resources. I had no idea what cakes were supposed to be.I smeared it thinly, as a result, they did not rise at all, either dried out, or fried, in general, crunchy biscuits tore off the paper with great difficulty. The cake came out very thin, we had to urgently make a thick marshmallow layer. I don't remember what kind of cream it was, but the overall impression is very, very sweet. And I threw the recipe further, and now I read the whole topic and realized that I had to try again.
Then an urgent question. I want to make a cake with a meringue with nuts, I have already baked the meringue, everything is fine. Is it possible to put it in the middle, smeared with charlotte, and at the bottom and at the top, 2-3 cakes of a milk girl?
valvery
Elya_lug Well, once I tore it off the paper, I didn't just bake it, but dried it to death. After all, they are baked well, ochchchennyi quickly, just have time to remove and smear. I smear on a silicone mat with already marked dimensions, it is very convenient. I haven't tried the option with nuts and meringues with wonderfully baked cakes, why not BUT ... that's why it's called the Milk Girl, which involves the widespread use of dairy products, and meringues with nuts are still from a different flavor repertoire. You just again don't get the true taste of a dairy girl, but maybe get something even more delicious and name it in a new way !!!!!
NatalyaN
valvery, thanks twice and - for such a story and for help.

Elya_lug, I agree with valvery, you should not mix different types of cakes here, the "milk girl" is so good that she has a simple, homemade, but very pleasant taste
Elya_lug
valvery, NatalyaN, Thank you very much for your advice . I'll do it separately.
Vitalinka
Girls, I need to bake this cake measuring 22x28 cm and at least 5 cm high. Please tell me how many portions of dough you need to knead?
NatalyaN
Mathematically speaking, I would take 1.5 servings.
Nastasya
From two servings I get a round cake weighing about 1.5 kg, with a diameter of 24 cm and a height of about 7 cm.This is an uncut cake, in the final version, about 1.4 kg remains with a diameter of 23 cm.

it means that you also need to take at least two portions for your size, but the height may not be enough. Better to take 2.5 servings, should be enough

PS: all indicated weight-dimensions are approximate

ZZY: if necessary, I can give the calculation formulas

Girls, I beg your pardon, I mistakenly gave the wrong data, now I have corrected everything and wrote all the numbers correctly.
Vitalinka
Girls, thanks!

Nastasya , if you can write the calculation formulas.
Nastasya
Oh, I just realized that I gave the above incorrect data, now I will correct them. Very, very sorry !!!!!!

Girls, thanks!

Nastasya , if you can write the calculation formulas.

OK, I'm writing.
In order to calculate the number of servings, we need to know the volume of the original (for which the number of servings is known) and the volume of the required cake.
Since I know how many servings are needed for a cake 23 cm in diameter and 7 cm in height, then I will take its volume as the original one. The volume for a round cake is calculated using the formula V = nR2hwhere P is pi, equal to approximately 3.14, R - the radius of the cake and h - height. So V = 3.14 x 11.52 x 7 = 2900 cm3 (rounded up the total)
For this amount, you need 1.5 servings of cake.

Now we calculate the volume of your torus by the formula V = abh. 22 x 28 x 5 = 3100 cm3 (rounded up the total). That is, a little more volume is obtained for your cake, which means that 1.5 portions are a little too small.

Just in case, more formulas (oh, this mathematics, but so good when you are familiar with it).

For a more accurate calculation of the number of portions, we compose the equation a \ b = c \ dwhere a - the volume of the original cake, b - number of servings for him, c - the volume of the required cake, d - number of servings for him. In this equation, at the moment we do not know the number d... To find it, you need b multiply by c and split into but... Specifically, in our case, 1.5 x 3100: 2900 = 1.6. In total, you need 1.6 servings for your cake.

Using these formulas, you can calculate absolutely any cake, substituting any required dimensions. You can also calculate the weight of the required cake, if the weight of the original is known.

In general, I do not know if it is clear to whom ... I kind of tried to describe everything in detail, but mathematics is such a thing ...

Vitalinka
Nastasya , thanks a lot !!! Everything is even very clear!
Nastasya
Vitalinka, you just made me happy !!!!!
I thought that nobody would understand anything except me here.
Apelsinka
Thank you, everything is very, very clear! I think that this mathematics will come in handy for me someday !!!
valvery
Nastasya to say thank you is to say nothing! You're a miracle ! Everything turned out to be so simple (I guessed about it, but this is how to reduce everything to elementary mathematical calculations) You are just gold !!!
Apelsinka
NatalyaN, thanks for the recipe! The cake is super !!! : girl_curtsey: I liked it very much, just for myself I will slightly increase the portion of the cream
And here is my cutter!
Milk girl cake
NatalyaN
Apelsinka , I'm glad that I liked the recipe! In the photo I see that the cream is really not enough for you. Maybe this is due to your cream? ...: secret: I still have them ...
Vitalinka
NatalyaN , thanks for such a delicious cake!
Nastasya , thank you for your help with the calculations!
Now I am reporting - everything worked out for me! True, I took 1.5 servings, not 1.6 as calculated. But from them I got 8 thin 22x28 cakes. Cream - sour cream 30% and sugar. powder. The height of the cake turned out to be 5 cm. The cake was left as a gift to friends, so there is no cutter. The cake managed to soak well in 2 days, it was very tender and tasty, they said that it looked a bit like a honey cake without honey. I'll show you how he looked

Milk girl cake
NatalyaN
Vitalinka, I am very glad that the recipe came in handy and you fit into the 1.5 portion and came out to the right size! And about the beauty of the cake, so in general, I will not say anything ...!

Good morning! For the first time I want to bake Milk Levochka, girls, please tell me if it is necessary to soak the cakes? Or is there enough cream?

The cream is enough. The cakes are very thin and soak well. You just need to give the cake time to stand, soak.
akhtuba
VitalinkaThank you very much for responding! Today I tried to bake ... it was a fiasco ... The first cake was firmly stuck to the paper, I could not peel it off, although the paper is non-stick. On the second cake, I smeared paper with butter, the result is the same. I put the rest of the dough in a slow cooker, I don't know what happens. I tried the dough that was torn off with difficulty, I really liked the taste. I would like to make friends with the "girl". Girls, what's my mistake? I did everything according to the recipe, it seemed like nothing complicated ... I was really upset
Story
I will try this cake on NG. I looked through everything here ... I have 1 can of Rogachev = 380g. I need to buy another jar of condensation, right?
Vitalinka
akhtuba, the cakes must be removed as soon as they are removed from the oven. I did this - I took it out, covered it with a clean sheet of paper, turned it over on it and immediately removed the sheet on which I was baking. You need to pick up the edge of the cake with a knife (it sticks) and pull off the paper. And so each cake, in addition to saving paper, baked on an already removed sheet. But you need to do everything very quickly. Try again. I made a cake as a gift and tried it on day 3, that is, on the first day I baked the cakes, missed the night for soaking. Decorated the 2nd day, the 3rd day I went to visit the cake and tried it there. The child ate a piece of cake, asked for more, and in the morning refused everything except a piece of that cake. This already says something!
Vitalinka
Natasha, you really excuse that I signed with you here.

Story , depending on how many servings you are going to bake.
Story
Vitalinka, well, I read it very attentively, here:

The jar says 400 grams
One serving of this and half of the other.
Nastasya
Tanya, well, just a little less flour pouring in, and that's all. Although I'll tell you honestly: bake two portions at once, because you will lick one and just get teased, it’s too tasty

I agree with Nastya, the cake is delicious! I also think to bake it on NG.
Story
Well, you know how to persuade everything and change my plans. That's all, thanks for the kind advice, I will bake two of this and 0.5 of the other. Still with him to the parents on 01.01 show. And how many times will I change my opinion to NG ...? What fickle I am! ... and I already put 2 chiffon ones in the freezer: white and chocolate.

Yes, I remember you all with kind words for the second year already !!! Thank you!

VitalinkaThank you for help. Before baking, I read Temka., I tried to take it off right away, it was baked tightly. I probably realized my mistake. I put two heaped spoons of dough on a circle with a diameter of 26 cm, the dough was less than in the photo. It was necessary to add a little more test. In finished form, my cake turned out to be 3mm high. Baking for 5 min. by timer. The top was white, and the bottom was like toasted.
Vitalinka
akhtuba, my cakes were also very thin like yours. Most likely you need to adjust the temperature of the oven, it looks like it gets hotter on the bottom than on the top. My cakes were slightly ruddy on top, and light on the bottom.
akhtuba
Vitalinka Thank you very much, I will try again. The rest of the dough was perfectly baked in a slow cooker, it turned out to be a delicate biscuit.

Tanya! Nastya wrote everything for you correctly, and 20 grams, I think, will not play the role, and a double portion must be baked

akhtuba, I support Vitalinka's words, try to adjust the oven.
Sweetness
Natasha, please tell me what could be the matter:
The first time I took up a "girl", everything is strictly according to the recipe. I have cakes with 2 tbsp. l. diameter 22! cm turned out well, sooooo thin, already baked mm3 maximum. By the way, I tore them off the paper by sprinkling the back of the parchment. So that's it. Out of the given number of products, I got as many as 7 cakes. The last 2 I have already baked from 3 spoons, but it still came out about 1 cm. I folded my creation in a pile until tomorrow, layering it with paper, even in such a flaky form, the cake pulls 4 cm by 4. It's a shame.
I read, girls have the same trouble, but with the oven my TTT is fine, the biscuits, although thin, are ruddy, appetizing.
Vitalinka
Sweetness , while Natasha is gone, maybe I can tell you. What doesn't suit you? The cakes should be very thin, 1 cm for the cake is a lot. When the cakes are soaked in cream, they swell a little. The thick crust will not soak well and the cake will be dry. If you need a tall cake, then you need to increase the portion.
Sweetness
Vitalinka, thanks, I expected from the photo that the cakes would be about 1 cm, so I was puzzled over the result, besides, I was embarrassed that Natasha had a dough for 5 cakes of 2 tbsp each. l., and I got 4 cakes of 2 tbsp. l. and 3 to 3. She has 10 tbsp. L., and I have 17. I, perhaps, modestly scooped up? : girl_haha: Maybe flour or condensed milk are different in density. Now I will be cunning - I will visually divide the kneaded dough into 5 parts, bake 1/5, then bake the remaining one into 4, bake 1/4, etc. This will make it clearer for me, otherwise I will guess how much it will turn out next time. And the cakes are delicious - honey!
Vitalinka
It seems to me that the number of cakes does not really matter. And your diameter is 22 cm, and Natasha's is 26 cm. The girls bake cakes of different sizes and different quantities. The main thing in this cake is to bake thin cakes and let them soak well with cream.
Sweetness
Quote: Vitalinka

And your diameter is 22 cm, and Natasha's is 26 cm.
well, right, on my 22 cm 2 tbsp. l. easier to smudge. than 26, so the cakes should be even thicker. Well, on Sunday we will evaluate the results of my efforts
NatalyaN
Vitalinka, thanks for the help !

Sweetnesswhat can I say? ... I have to try, only by experience ... I did it the first time ... I didn't have to tear off anything ... I took the cakes out of the oven, immediately removed them from the parchment, nothing stuck to me. .. maybe it's also a matter of parchment - after all, they are different ...
Sweetness
Natasha, here is my report on Dairy Girl:

Sweetness, I accept, well done!
From the photo it seems that it was soaked well, so what should have been delicious?
Sweetness
Yes, soaked perfectly, this cake has all the beauty in thin cakes. Thanks for the recipe!
Giraffe
Well, I'm with the girl again. Sprinkled coffee on top. Well what can I say, they asked for more on Sunday. It turned out to be tender and tasty. The last cake is a bit thick, but there was no way to divide it here or there, so we will assume that it was intended that way.
