Red currant and meringue pie

Ingredients

Wheat flour 150 g
Milk 5 tbsp. l.
Salt pinch
Sugar 150 g
Butter 50 g
Vanilla sugar 1 tbsp. l.
Egg 3 pcs.
Starch 50 g
Baking powder 2 tsp
Red Ribes 1 kg

Cooking method

  • Divide eggs into yolk and white. For the dough, beat the egg yolk with 3 tbsp. l. hot water (40-50 degrees), gradually adding sugar and vanilla sugar. Stir flour with baking powder. Melt the butter and mix it with the egg mass, adding milk and flour. Preheat the oven to 200 degrees C. Grease the baking sheet with butter (I usually use baking paper and grease it). Spread the dough with a spatula on a baking sheet, a layer of less than 1 cm is obtained. Bake the cake for 15 minutes. In the meantime, wash the currants, let dry well and remove the twigs. Beat the protein with salt into a stiff foam, gradually adding sugar. Add currants to the protein. Set the temperature in the oven to 150 ° C. Apply the meringue to the cake and leave to dry on the medium oven level for 15-20 minutes.
  • Cut the cooled pie into 20 pieces and serve immediately.
