Ingredients

Cake dough:
A glass (250 ml) flour
125 g sugar
125 gr. butter
3 yolks
1 tsp baking powder
Filling:
3 squirrels
160 g granulated sugar
1 tbsp. a spoonful of lemon juice
1.5 tbsp. l. flour
1 tbsp. a spoonful of starch
1 tsp baking powder
0.5 kg red currant

Cooking method

  • Cake dough:
  • The dough is mixed, put in the refrigerator for half an hour.
  • After the refrigerator, spread the dough with a spoon on the Firebird rug, under the rug I put two crossed ribbons of non-stick fabric (to make it easier to pull out). We level the surface.
  • Making the filling:
  • Whisk the whites until peaks, adding sugar and 1 tbsp. a spoonful of lemon juice. Then carefully mix flour, starch, baking powder into the proteins.
  • It's time to add the red currants. Mix gently with the total mass of the filling.
  • Place on a cake base and flatten carefully.
  • Baking 65 + 40 (I was afraid that because of the rug and ribbons it would not bake). Without opening the lid, leave on the Heating mode for 1 hour. Pull it out with tapes, let it cool, pull out the rug ... and pop ... Of course, this is not a meringue ... But, as you can see, the consistency is dense, reminiscent of a soufflé.

It's just that at that time, I didn't have a microwave, but you know everything about my oven, so I wanted to try just this method. It turned out tasty, but still, ideally, the top of this pie should be meringue, that is, dry and crunchy.

This cake has become one of the favorites in our family. But now I bake it in the oven at 160C for 1.5 hours. And on top of me - pure meringue without adding flour and starch, and I do not mix it with the berry - I put it on top. In this form, this cake looks like a cake. True, meringues always crack a little.
