Fruit jelly with spices (Marmelade de fruits aux épices)

Ingredients:

Quince 250 gr.
Ripe pears 500 gr.
Juice and zest of half a lemon
Cinnamon 1 stick
Badian 1 star
Vanilla 1 pod
Sugar 600 gr.

Cooking method

  • Peel and chop the fruit, remove the zest from the lemon (set aside), squeeze out the juice and mix with the pieces of fruit.


  • Bring 150 ml of spiced water to a boil, add fruit and cook for 30 minutes.


  • Place the fruit in a colander.


  • Mix the syrup with sugar, bring to a boil over medium heat and simmer for 5 minutes.


  • Return the fruit to the boiling syrup, stir in the zest and cook, stirring occasionally, for 30 minutes, first over high and then over medium heat.


  • Pour into prepared containers and cool.

I printed out this recipe for myself a long time ago, but somehow it didn’t work out ... either one is not there, then the other, then it’s just lazy ... And yesterday the X hour came, but why didn’t it come earlier ?! This is soooo delicious, soft pieces of quince in jelly ... mmm ... And the spices ... they are so "welcome" in this recipe, and so well chosen ... in general, the recipe is wonderful, the marmalade is delicious ... that's all good in this recipe, if the quince grew under the window and all year round, it would cook all the time!

From my changes:
Instead of pears, quince (ripe and very sweet), that is, all 750 gr. fruit in my case, quince. Sugar put 500 gr. Everything else is prescription.
