Eggplant caviar "Miracle of nature"

3 medium-small eggplants
3 sweet red peppers
4 tomatoes
1 apple
3 medium onions
1 medium carrot
1 tablespoon ketchup or adjika
2-3 cloves of garlic

Pierce the eggplants in several places with a toothpick. Remove the skin from the tomatoes, cut into 4 pieces, remove the juice and seeds. Peel the apple, core it, cut into 4 pieces. Only wash and dry the pepper. Line a baking sheet with baking paper, place everything at once and bake in the oven at 200 °.
Arrange the prepared eggplants and peppers in plastic bags, tie the bags and leave the vegetables to "sweat".
While the vegetables are baking, cut the onion into cubes, grate the carrots on a coarse grater and fry in the minimum possible amount of vegetable oil until a beautiful golden color.
Remove the skin from eggplants and peppers, chop all vegetables, stew together with carrots and onions until the liquid evaporates, add adjika or ketchup, bring to taste (salt, pepper, sugar). Add chopped garlic at the end. Put everything in a bowl, beat with a blender and chill.
It turned out so delicious that words cannot betray! But ... Ready-made caviar reminded me of that stagnant squash caviar from cans.

You can prepare caviar. From this number of products, approximately a liter jar is obtained.
After beating with a blender, bring the caviar to a boil with constant stirring, put in hot sterilized jars and sterilize for 20-30 minutes. Then roll it up.
