Sponge cake in the airfryer

Ingredients:
Egg 3 pcs
Wheat flour half a cup
Sugar half a cup
Starch 1 tbsp. the spoon
Salt
Cooking method

1) Prepare the form. (I have a rectangular, metal. With a non-stick coating), grease with oil, sprinkle with semolina.

2) Turn on the airfryer - 180 degrees, max. speed, any number of minutes

3) Separate the whites from the yolks

4) Mix flour and starch

5) Beat the whites with a pinch of salt into a strong foam, adding sugar little by little

6) Beat the yolks separately

7) Add yolks and flour to the protein mass, mix everything carefully - not with a mixer !!!
Put in a mold, bake on a medium wire rack,

first - 180 degrees., low speed, 30 min,

then - 15 - 20 minutes. at medium speed, checking readiness. Do not remove immediately!
It turned out to be a completely baked, soft, airy biscuit. Too sweet for my taste, but the kids ate it all while I was wondering whether to anoint it with something.

In an airfryer at one speed, the middle is always poorly baked, so you can only use a mold with a hole in the middle. I cover the mold with foil with small holes so that there is no thick crust on top that interferes with a good rise of the dough. I bake the biscuit according to the instructions for the airfryer at 205 degrees. and low speed. If there is a filler (fruit, etc.), then I bake at medium speed at the same temperature. I bake the butter biscuit, covering it with foil with holes at 205 degrees. and medium speed, when the smell of baking appears, then reduce the speed to low. Baking time - 40 - 50 min. depending on the size of the dough. After stopping the fan, I leave the mold with the biscuit for 10 minutes in the airfryer with the lid open, remove the foil and cool it on the grill in the form upside down. If the mold is silicone. then the biscuit comes out of it easily and then I cool it without a form. I don't smear the forms with anything.
