Those wheat and wheat-rye breads that I bake (recipes are designed for 400-450 grams of flour) rise to the top of the bucket. It simply won't be possible to bake more weight, because the dough will come out of the bucket and get onto the heating elements. Rye-wheat and rye breads do not rise to the very top (in my x \ n) and it seems that you can bake larger bread, but I have not baked and am not going to. I think that after all 1200 x \ n will not pull, but 900 grams is easy. So be guided by what is written on the stove. And if you recalculate the weight of products in recipes for x \ n, which are given for 1200 grams, then you get a little more than 900 grams. Can't bread get heavier by almost 300 grams during baking? I think there is a mistake in the instructions.

For Borodinsky I use (as well as for all breads mixed with rye flour) the "Whole Grain" program. And I do the first batch twice (I like it better - the dough rises better).
But the convex roof of rye breads does not work for me. Only if the content of rye flour is less than 30%, and the flour should be sown peeled.And still it is not very convex. But if you take the flour in / s, then the roof is kraaasyiyeeny. But it still tastes less fried than the sides - the window in the lid makes itself felt. But Easter cakes were wonderful.
